Happy New Year! Here’s wishing you a prosperous 2017 and a

fruitful Year of the Rooster!

In traditional Chinese communities, there is a lot to celebrate during the

Chinese New Year. Families gather for reunion dinners and then head for

the New Year fairs, hoping to bring in luck and fortune in the year ahead.

Lunar New Year comes a little early this year. Preparations may have

already started for many families, which means it can be a very hectic

and tiring time. We hope our New Year feature gives you inspiration for

auspicious food selections, festive decorations and clothing. You can

also ring in the New Year with lots of fun activities, such as watching

spectacular floats and night parades in both Hong Kong and Macau.

If you’re a foodie, this issue is full of goodies for you. With the opening

of Ho Man Tin and Whampoa MTR stations in Hong Kong, we embark on

a tour exploring the neighbourhood of Hung Hom in search of local and

Asian delights. We also take you to Macau for authentic cuisine in hidden

local eateries. If you fancy Italian food, follow our writer’s footsteps and

sample a range of gastronomic treats and wines in our Sicily dining story.

There is a Chinese saying that “eating well is fortune”. We hope you

get to taste delicacies from all around the world this year.

踏入雞年，港澳兩地各有大型活動賀新歲。在澳門，兩天的「雞年花車巡遊匯演」

分別於正月初三（1月30日）及初八（2月4日）在澳門科學館及沙梨頭北街起步，並有千人匯演和文藝歌舞，初三晚還有壓軸煙花表演。十多部花車之後分別在西灣湖

廣場及塔石廣場公開展覽。民眾還可於新春期間，在澳、氹指定地點燃放爆竹慶祝。

香港方面，農曆新年前各區有年宵花市，以維園花市的規模最大。大年初一

（1月28日）的「國泰航空新春國際匯演之夜」躍動全城，花車巡遊於尖沙咀文化中心廣場出發，途經廣東道和彌敦道等，還有海外及本土團體的舞龍舞獅、啦啦隊、鼓樂和華麗歌舞表演。年初二晚維港上空有賀歲煙花匯演，歡慶新年。

Large-scale Chinese New Year celebrations are planned in Hong Kong and Macau for the Year of the Rooster. In Macau, parades will be held on 30 January and 4 February – the third and eighth days of the lunar calendar – with more than 1,000 music and dance performers. A splendid fireworks show will round out the first night of festivities, and a dozen or so floats will be showcased in Sai Van Lake Square and Tap Seac Square after the parade. Locals and visitors can light firecrackers at designated areas on the Macau Peninsula and in Taipa during the New Year.

Over in Hong Kong, visitors can tour the many New Year fairs all over the city in anticipation of the holiday – the one in Victoria Park being the biggest. On 28 January, the first day of the Chinese New Year, the Cathay Pacific International Chinese New Year Night Parade serves as the flagship event of the festive season. 澳門旅遊塔的新春盛事「步步高陞慈善登塔日」，將於雞年大年初三（1月30日）舉行，活動免費開放給公眾登上塔頂，並分上、下午賽程，健兒們大清早由地面步

行挑戰1,298級至61樓冒險活動層；下午的參加者則乘電梯至38樓起步，再徒步登上冒險活動層，寓意步步高陞，新年行大運。戶外廣場同時舉行慈善義賣，為澳門

紅十字會籌款。

A Chinese New Year highlight, the Macau Tower Charity Walk is held on the third day of the Lunar New Year (30 January), offering the public free access to climb to the top. The day's event is split into morning and afternoon sessions, and climbers can take the full course in the morning (1,298 steps from ground level to the Adventure Deck on Level 61), or opt for the “shortcut”, which starts at Level 38 in the afternoon. The walk symbolises a great ascent for the year ahead. There will also be a charity sale at the outdoor plaza to raise funds for the Macau Red Cross.

鄰近舊啟德機場的九龍城，以往是古蹟、美食的集

中地，吸引不少本地人及遊客駕臨，如今機場搬

遷已近20年，但九龍城依然熱鬧如昔，晚飯時段更人流如鯽。

區內有不少歷史老舖，例如在市區已甚少見的醬

油店，若不是自置物業，早己被淘汰。另有一間開業

半世紀、專賣豬什粉麵的食店，每天有長長的人龍輪

候，為的是一嚐美味的豬什或潮州四寶撈麵。九龍城

有各式各樣的火鍋店，也可找到售賣世界各地鮮果的

水果店，琳瑯滿目。九龍城街市攤檔整潔，不時見到

演藝名人買菜，難怪有「名人街市」之稱。

昔日的九龍城寨無人不曉，後來歷經變遷，一度變

成「三不管」地帶，至1993年被拆卸。城寨的歷史可追溯至宋朝，原本是防衛海盜的據點，於1810年建了九龍寨炮台。鴉片戰爭後，城寨的戰略地位變得更重

要，到清初康熙年間，為方便防衛及官衙辦工，才開

始築起城池。

1898年，英國欲租借深圳河以南及離島，要求簽署中英展拓香港界址專條，將九龍半島及香港島變成殖

民地，但中國政府堅持九龍城寨不列入租地範圍，至

1950年代一度變成「九反地帶」，是罪惡、鴉片、賭檔的溫床。城寨原址現已改建為寨城公園，不少遺迹

得以保留，並有不少珍貴的歷史圖片展出，吸引很多

外國遊客前來參觀，也值得品嚐美食後再遊古蹟。

During the good old days when it was still home to Kai Tak Airport, the Kowloon City area was extremely vibrant, with numerous historical sites and restaurants

attracting locals and foreign visitors alike. The airport closed almost two decades ago, but Kowloon City remains as lively as before, especially in the evenings.

One unique thing about Kowloon City is that there’s no shortage of decades-old shops, like the one that specialises in soya sauce. This kind of retail shop is a rarity in any other district in Hong Kong; the owner bought the premises, thus sparing the shop from the wrecking ball. Then there’s the half-a-century-old noodle shop – every day, you’ll see giant queues outside the eatery, with diners eagerly lining up to try its delicious dishes, especially its pig offal and Chiu Chow “four treasures” with oyster sauce.

For something a bit more refreshing, pop into one of the numerous fruit shops, which sell a variety of delicacies sourced from all over the world. Kowloon City is also known for its wet market, which is known as the “celebrity market” because local showbiz stars are often spotted shopping there.

Above all, Kowloon City owes its fame to the global notoriety of Kowloon Walled City. The urban enclave was effectively an ungoverned settlement for several decades before its demolition began in 1993. The history of the Walled City can be traced back to the Song Dynasty, when an outpost was created to ward off pirates. During the reign of Emperor Kangxi, it was transformed into a city as part of the Qing court’s efforts to reinforce military fortifications and facilitate the work of local government offices. Following the Opium Wars, it became strategically important.

In 1898, Britain leased the New Territories and wanted China to sign the Convention for the Extension of Hong Kong Territory; the majority of the Kowloon Peninsula and Hong Kong Island became a British colony. However, the Qing government insisted that the Walled City be excluded from the lease, which gave rise to its control by the triads from the 1950s onwards. It became known as an impoverished haven of crime, opium dens, gambling parlours and makeshift dentistry offices.

Today, the former site of the Walled City has been turned into a beautiful park, with a few artefacts preserved and a slew of fascinating historical photos on display. Many visitors like to get a flavour of the past before they depart on a gourmet journey through the rest of Kowloon City.

代藝術大師大衛．霍克尼的展覽《David Hockney: Current》，展出其畫作、數碼圖像、照片及錄像片段等逾1200件作品，當中不少是其新作，部分更從未在澳洲展出。焦點包括他以iPad繪畫的自畫像，及美國Yosemite國家公園的風景畫等。參觀者又可在35米長的走廊中欣賞超過80幅肖像畫近作，繪畫的人物包括霍克尼的親友及其他藝術家。

and intrigued in a dedicated 35-metre-long gallery

lined with more than 80 recent portrait paintings of

the artist’s family, friends and other artists.

A major winter celebration in Canada’s Quebec City, the annual Quebec Winter

Carnival features 200 ice activities including the Upper Town night parade, a snow

sculpture competition, giant bowling and a canoe race for elite athletes. With some

500,000 visitors expected this year at the world’s largest winter carnival, another sight

not to be missed is the magnificent Ice Palace. The oversized snowman Bonhomme,

the festival’s official ambassador, will certainly make an appearance as well.

Every year, the fourth Saturday in January marks the Yamayaki Festival of

Mount Wakakusayama near Nara in Japan. A torch is lit with sacred fire at

the Kasuga Grand Shrine, then a parade of Buddhist monks carries it down

to a small shrine at the foot of the hill. The hill is then ceremonially set ablaze

葡裔建築師兼藝術家馬若龍的兔子燈籠設計深入民心，成為澳門的象徵Architect and artist Carlos Marreiros’ rabbit lantern design has become an endearing presence for Macau and its people

婆仔屋的建築師事務

所，每個角落都放滿他

多年來的藝術創作，有繪畫、藝術

裝置、插畫和大型壁畫等，儼如一

間私人博物館。訪問期間，戶外的

小庭園和兩棵老樟樹也掛滿了曾在

《兔仔燈籠—馬若龍和朋友們彩

燈展》中展出的大大小小的燈籠，為

這間有百年歷史的黃色葡式建築增添趣

味與色彩。

兔子燈籠是馬若龍的藝術創作中經常出現的主題，

由為2010年上海世界博覽會澳門館設計的得獎作品，以至最近的兔子燈籠展覽，也是圍繞這個標誌。

他形容兔子燈籠是他為澳門尋找的身份象徵，是他的

使命。他說：「我希望找一個代表澳門的象徵，像沙

甸魚代表里斯本一樣。我想起兒時中秋節的兔子燈

籠，這玩意流傳至今已數百年，不論本地還是葡裔的

小朋友都喜愛，在我祖父母一輩已開始玩，這不是很

有代表性嗎？」

馬若龍肩負的使命，還包括保育和活化。這位澳門

土生土長的建築師及城市規劃師，於1983年回流澳門後獲得澳葡政府器重，先後擔任澳門文物保護委員

會委員，以及獲任命為澳門文化司署司長，有份參與

Holy House of Mercy and you will be transported to

a private museum where his life’s work – including

paintings, installations, sketches and murals – f i l ls every corner. During our interview, lanterns of all sizes that had been featured in his Little Rabbit Lanterns: An Exhibition by Carlos Marreiros and Friends dangle above the patio and from the branches of two old camphor trees, adding an interesting overlay of colours and a creative touch to this century-old Portuguese-style building.

The rabbit lantern often appears as a theme in Marreiros’ artwork; indeed, his works, ranging from the design of the Macau Pavilion at the Shanghai World Expo 2010 and the recent rabbit lanterns exhibition, were all based on this symbol. According to Marreiros, the rabbit

lantern is the fruit of his mission in trying to find a symbol to represent Macau. “I was hoping to find a symbol for Macau, just like how sardines came to represent Lisbon. Then I thought of the rabbit lantern that we played with during Mid-Autumn Festival and how it has been popular for centuries among local and Portuguese children in Macau,” he recalls. “Even my grandparents used to play with it. Don’t you think it holds a special significance?”

Cultural preservation and restoration are also part of Marreiros’ mission. Born in Macau, Marreiros returned to his hometown in 1983 and joined the Macau government. His roles over the years included those of member of the Cultural Consultative Council, as well as president of the Cultural Institute of the Macau government. Not only was Marreiros one of the early pioneers shouldering responsibility for conservation efforts in Macau (he was involved in drafting conservation legislation), he has been an active promoter of Macau culture, music and artistic development. The old Albergue of the Macau Holy House of Mercy is a restoration project spearheaded by Marreiros and is now a creative space for cultural activities. It is also an exemplar of successful conservation and restoration.

重要人物之一，亦是澳門文化、音樂和藝術發展的推

手。他創辦的婆仔屋文化創意空間，本身亦是保育及

活化的成功例子。

回顧過往推動保育的工作，馬若龍坦言遇到不少阻

力，很多人認為保育會阻礙城市發展，但他堅持向市

民解釋其重要性—一間古老的教堂和廟宇未必是金

堆玉砌，卻有集體回憶的意義。猶幸到了1990年代多了新一代支持的聲音，他指：「以前沒有人會相信

澳門有機會（於2005年）入圍世界文化遺產名錄，這再不是做夢，現在回想起來也感到無悔和自豪。」

馬若龍直言政府可以做得更多，例如提供更多技

術上的支援、增加保護舊建築物的經費，以及成立針

對保育的藝術及工藝學院，培訓保護文物的人才和技

術人員。他亦期待澳門開設一所建築及都市遺產博物

館，並說：「全世界的建築博物館不多於10間，展館可以多媒體形式展示澳門自16世紀以來的發展歷史，也可放一些全球建築大師的模型作品等，這可令澳門

更趨多元化。」

熱衷藝術創作的他，亦藉遊歷世界

增廣見聞及吸收靈感。他喜歡東西合

璧的地方，例如融匯歐洲和中東特色

的土耳其首都伊斯坦堡；喜愛結合

現代功能的古老建築，例如北京的

四合院；更鍾情由古老建築改建並

加入現代化設施的精品酒店。看來

中西合璧的精神或許一早就深藏

在這位中葡混血兒的血液裡。

位，翌年在德國取得城市規劃碩士

學位；1983年回到澳門，自始參與多項文化藝術活動，1989至1992年獲委任為澳門文化司署司長，其建

築及藝術作品在澳門及海外屢獲殊

榮，並曾於世界各地舉行超過22次個人作品展。

Looking back, Marreiros reveals that he faced compelling opposition in his efforts aimed at promoting conservation; many felt that conservation was a hindrance to the city’s modernisation and development. But Marreiros was adamant that the people understand one thing — an old church and temple may not be worth very much commercially, but they hold special significance in terms of the collective memory that they represent. Thankfully, the 1990s provided Marreiros with a new generation of support. “In the past, no one would ever believe that Macau would have the chance [in 2005] of being on the UNESCO world heritage list,” he says. “This isn’t a dream anymore. The thought of this leaves me with no regrets, and I can’t help feeling very proud.”

Marreiros concedes that the government could do more, such as by providing more technical support, allocating more funds to the preservation of old buildings, as well as setting up a school of arts and crafts specialising in preservation. The latter would make Macau a breeding ground for homegrown cultural preservation expertise, and perhaps even an exporter of such knowledge. He also hopes to see Macau set up an architectural and urban heritage museum. He says, “There are fewer than 10 architectural museums around the world. It could showcase Macau’s development history from the 16th century through multi-media, as well as display models of the works of architectural masters globally. This would help to enhance Macau’s diversified development path.”

While Marreiros dedicates most of his time to his artistic work, he also spends time travelling the world in order to broaden his horizons and find inspiration. He particularly appreciates places that are a meeting point bet ween the East and the West , such as Istanbul, which has a unique culture rooted in both European and Middle Eastern influences. He loves buildings that manage to combine historic and contemporary features without losing their functionality – such as Beijing’s courtyard houses – and also has a passion for old buildings that get transformed into modern boutique hotels. Given his spirit of achieving a harmonious balance of the old and new, East and West, it could perhaps be said that this Macanese artist has found his twin flame.

Japan, and countries with great history such as Portugal and France. The architecture of Tuscany and Salento in Italy is also particularly impressive.

What are your favourite cuisines and foods?I love Portuguese, Japanese, Malaysian, Guangdong and Chiuchow cuisine. Michelin-starred dishes and local fare are both my favourites. Nothing beats eating rice rolls and wonton noodles on the street.

About Carlos MarreirosArchitect, urban planner, artist and poet Carlos Marreiros was born in Macau in 1957. A graduate of the Technical University of Lisbon in 1981, he also holds a master’s degree in urban renovation. Since returning to Macau in 1983, the highly lauded Marreiros has worked in arts and cul-ture, with the government, and has held over 22 solo exhibitions world-wide. He is the founder and partner of MAA Marreiros Architectural Atelier and of the Albergue da Santa Casa da Misericórdia.

Run by locally born Portuguese-Macau siblings, Casa do Porco Preto (House of Black Pork) is just across from A-Ma Temple. Co-owner Vanda Rodrigues, an enthusiastic cook, says that the restaurant has its own farms in the region of Alto Alentejo, Portugal, from which grass-fed pork, beef and mutton are directly imported. Casa do Porco Preto is well known for its “secreto” dish, which is the “secret” cut of pork layered just below the belly fat. The texture is extremely tender, yet not quite as fattening as the belly. You can also order sauteed clams with white wine sauce to spice things up. Cooked with chilli and garlic, the clams are soaked in a watery broth; dip some bread or add a bowl of rice to it, and the umami elements will seduce your taste buds. Seafood stew rice and roasted suckling pig are also recommended. Eating here is like having a meal at a Portuguese family’s home, which is indeed quite exceptional in a city like Macau.

Located near the picturesque Penha Hill and only a two-minute walk from Mandarin House, Padre Cafe e Cucina is well known for its fresh pasta – especially its fettuccine carbonara. All pastas are homemade and the chef even prepares his own “angry sauce”. Other highlights on the menu include various artisan pizzas, the Portobello’s Secret (mushroom starter) and the fruit smoothie of the day, deliciously blended with yoghurt for added health benefits. Its pour-over coffee is also a must-try. When it comes to ambience, the minimalistic interior of Padre Cafe e Cucina is chic and elegant, reminiscent of restaurants in Milan and Rome. Through a window that looks into the kitchen, you can even catch a glimpse of the handsome Italian chef in action.

Near Senado Square and steps away from the Sé Cathedral, Boa Mesa serves classic homemade Portuguese delights such as duck rice, grilled black pork steak and codfish with cream. Our favourites include the fried pork with clams and the beef Stroganoff. Feijoada, a meat and beans stew, is also a hugely popular dish, though it is only served on Thursday; this common Portuguese dish is widely served in Portugal as well as other former Portuguese colonies including Goa and Brazil.

Hea – 聚腳首選HEA – POPULAR HANGOUT在香港和澳門俚語中，「hea」意指「放鬆一下」，而He a證明了輕鬆自在的飲食場所不一定喧囂嘈雜。這家面積不大的咖啡店，以高高的天花

及親切氣氛取勝。在寒冬日子，到這兒來一碗牛

尾通心粉配一杯咖啡，就再好不過了。此店的招

In Cantonese slang, “hea” means to relax – and Hea proves that casual dining venues don’t have to be noisy – the relatively small eatery has high

ceilings and a cosy atmosphere. On a chilly winter day, enjoying a bowl of oxtail macaroni with a cup of coffee is simply perfection. The grilled beef ribs and Daniel’s pork ribs are popular signature dishes. As well as an affordable lunch menu, the restaurant also offers an array of interesting finger-food items. Due to the fact that it serves beer, a younger crowd tends to hang out well into the evenings, as Hea closes at midnight.

There’s a renaissance happening in the Hung Hom and Whampoa area (known for its once-thriving shipbuilding, repairs

and cement industries), with the new Ho Man Tin and Whampoa MTR stations making it more accessible than ever. Take Ho Man Tin Station’s B1 exit across the Chatham Road North footbridge, make a turn into Station Lane and you’ll find Hung Hom’s Kwun Yum Temple. Built in 1873, the temple is now listed as a Grade 1 historical building. It has many worshippers all year round and is particularly busy for the Kwun Yum Treasury Opening Festival on the 26th day of the first lunar month, which this year falls on February 22 at 11pm. That’s when large crowds queue up overnight to pay their respects and “borrow money from the treasury”, wishing for fortune and blessings.

走到附近的寶其利街，會發現外觀毫不起眼的寶

石戲院。這間現時全港最古舊的戲院於1970年開幕，由地下的磅重機到樓上的購票大堂，都充滿70年代懷舊氣息，雖然影院已翻新及引入數碼放映系統，

但仍保留全港僅存的傳統「人手劃位」售票方式，更

On nearby Bulkeley Street, you’ll spot the low-key Lux Theatre. Opened in 1970, this is Hong Kong’s oldest standing cinema. The theatre is a nostalgic step back in time, from the old weighing machine on the ground f loor to the ticketing lobby’s ’70s décor. The theatre was refurbished and had a digital projection system installed a few years back, but ticketing is still done manually. Another reason for a visit: the Lux has the cheapest film ticket deals in Hong Kong. Grab a bite at the popular New Chung Kee Chiu Chow Restaurant next door after a movie for some authentic Chiuchow, stir-fried and seafood dishes.

走到黃埔花園，你可在這個自給自足的社區找到大

量吃喝玩樂的主意，巨型的黃埔號內是百貨公司和商

場，亦反映這裡昔日是船塢的歷史。再往海邊方向前

進便到達紅磡碼頭，乘坐小輪到北角，伴著海風享受

悠閒。沿岸的紅磡海濱花園與尖沙咀海濱花園打通

後，成為跑步的好去處，你更可由紅磡漫步至尖沙咀

天星碼頭，沿途欣賞維港美景。

There are many Japanese and Korean dining options in the area that cater to its large Japanese and Korean communities. Robata Inaniwa Udon – Inaniwa Yosuke, a restaurant specialising in udon and robata-grilled fare, is especially popular among locals and Japanese. Restaurant owner Go Yamanobe imports Inaniwa udon directly from Sato Yosuke in Japan, and the homemade ox tongue with white miso paste is another popular choice.

Dak Chi Go, the eatery across the road, serves homestyle Korean fare. The menu includes braised beef short ribs, pickled octopus with rice rolls and more. The shop’s fried chicken is served with homemade sweet-and-spicy or soy sauce. Kevin Lau, the Korean owner who speaks fluent

Cantonese, explains that the eatery only serves authentic Korean flavours and does not adapt to local tastes. Next door is the relatively new Burger Factory, which sells hearty burgers, with the Inferno and the eel and cheese omelette burgers coming highly recommended.

You’ll find plenty of ideas for food and fun within the Whampoa Gardens complex. A large boat-shaped shopping mall called The Whampoa (complete with a department store inside) is a reminder of the district’s history as an important dockyard. Moving towards the waterfront, you’ll find Hung Hom Pier, where you can hop on a ferry for a short and leisurely ride to North Point. The long waterfront promenade now connects the harbour frontages of Hung Hom and the Tsim Sha Tsui Promenade and is a great spot for jogging. Or you could take a stroll to the Star Ferry Pier to soak in the world-class view of Hong Kong’s Victoria Harbour.

To promote the area’s unique history and characteristics, both Ho Man Tin and Whampoa stations have artistic elements incorporated inside and out. The main painting in Ho Man Tin Station’s transfer concourse, titled Between Nature and the City, is illustrated with sparrows. At the green area of the station forecourt (exit B1), two environmental sculptures – FrogScape and FrogTopia Arch – are on display, and the covered footbridge ceiling features Blessings · Bridge, a mixture of Chinese ink-wash painting and calligraphy. Two large murals at both ends of the Whampoa station platforms, titled History and Imagination – Whampoa, depict the district’s past and collective memory, with many landmarks unique to Hung Hom.

事實上，這裡的高速公路無論有沒有修路工程，都教

仍未熟習意大利道路規則的人驚心動魄。不過西西里

人熱情好客，特別是鄉鎮的居民，而鄉鎮更是真正體

驗西西里島風情的地方―在文化古蹟包圍下，享受

地道的滋味佳餚，品酩本地美酒。

Sicily is perhaps the only spot in the world where freeway signs warn drivers to slow down to 110 kilometres per hour when

approaching roadworks. Sicilian highways, in any state of repair, are notoriously hair-raising for those unaccustomed to Italian road rules. But Sicilians are a different breed, particularly outside the cities, which is where the real Sicily is best experienced – alongside a savoury meal and a glass of local wine in the shadow of the region's tangible history.

One of the great pleasures of travelling to Italy comes from tucking into a great meal after touring its scores of UNESCO World Heritage Sites – Italy has more than any other country and Sicily alone boasts more than 50. As well as a rich history, Sicily has some of the nation’s most remarkable food and wine, the latter of which deserves international attention.

Situated as close to Africa as it is to Europe, Sicily has historically been a natural target for conquerors, among them the Greeks, Romans, Vikings and Spanish. Each left a legacy to explore, be it the Norman structures of Palermo or the typically Arabic architecture of Marsala. The mix of diverse cultures that left physical and culinary imprints makes Sicilian cuisine one of the most distinct in a country that prides itself on food.

The crowded west coast has been a popular tourist destination for years, with visitors drawn to the incredible temple ruins at Selinunte and Agrigento, and the region’s signature Marsala and passito wines (Donnafugata’s Ben Ryé is a must for fans of sweet wines), but the low-key southeast also demands a visit.

Start at the foot of the iconic Mount Etna in Catania after riding Trenitalia’s Intercity Notte overnight train from Rome down the country and across the strait of Messina. The 8th-century-BCE city is as renowned for its street food as it is for its ancient Greek temples, Roman cathedrals and Baroque churches that have survived burial by multiple Etna eruptions and lava f lows. Catania is the perfect place to dive into Sicily’s signature foods, beginning with arancini – deep-fried

rice balls stuffed with whatever the cook feels like using. Wash it down with a refreshing granita, the semi-frozen part-snack, part-drink traditionally flavoured with tangy blood oranges or lemons.

Next, head south to Syracusa, one of Europe’s most historically significant spots. A powerful city-state founded in 730 BCE, Syracusa’s Greek, Roman and Byzantine history is visible on every corner. The cathedral at the centre of historic Ortygia island sits atop a 5th-century Temple of Athena, itself built on a pre-Hellenic site, packing the city’s entire history into one jaw-dropping building. The cathedral is a working church, so don’t be surprised if admission is prohibited due to a wedding.

After the cathedral, head to the Temple of Apollo and the lively Mercato di Ortigia market, where the colours of the local produce are rivalled only by boisterous vendors hawking fresh seafood. Caseificio Borderi, essentially a deli, offers up signature Sicilian delicacies including tricotta – tripled-cooked ricotta cheese – which legend says was invented by Sicily's famous mathematician Archimedes.

Swing southwest toward the UNESCO-rated Val di Noto region – which incorporates the cities of Noto, Modica and Scicli – and make time for a wine-pairing lunch at one of the island’s most creative wineries: Planeta. The Buonivini vineyard gives visitors a taste of a non-traditional vintner and affords a chance to chat with other visitors; lunches are at a communal table and once the wine starts f lowing, so does the conversation. Planeta’s reds are stellar –this is the cradle of the indigenous Nero d’Avola grape – but its chardonnay is a standout. Less oaky and sweeter than its French counterparts, it’s unconventional and refreshing.

AROUND SICILY到西西里必須租車遊覽，但車子宜小不宜大，因為古城中心

A culinary pilgrimage can be made to the pretty Baroque town of Modica, which boasts a bustling main street dotted with local designers, cafés and gelateria, perfect for a classic Sicilian breakfast of brioche con gelato – a sweet bun stuffed with ice cream; served with strong espresso, it’s a deliciously decadent way to start the day. With constant food and aperitifs, the owners pamper guests as much as they challenge them with vineyard hikes, enlightening vineyard tours and cooking classes on offer, complemented by impeccable Sicilian hospitality. Take home Tasca’s stellar chardonnay or its defining Rosso del Conte. You’ll want to recapture the moments.

George Town was officially established as a British settlement in 1786, but it was part of an important trade route for Indian, Muslim and Chinese merchants long before that. The arrival of the Europeans – first the Portuguese and then the British – around the end of the 16th century proved a turning point. George Town was the brainchild of Francis Light, who convinced the Sultan of Kedah to hand Penang over to the British East India Company. Light would serve as superintendent of the settlement until his death and is immortalised at Fort Cornwallis with a statue.

George Town’s main thoroughfare is Jalan Masjid Kapitan Keling, otherwise known as Street of Harmony, and showcases the history and community of the island. At one end is the Georgian-neoclassical St George’s Church, while further south on the same street you will f ind a variety of religious and spiritual landmarks, including the Kuan Yin Temple,

A visit to the Penang State Museum is good for a potted history of the city and the state of Penang. With an emphasis on local arts and crafts, the museum’s galleries look at Penang’s different communities as well as historical events, and will give you plenty of ideas for what to do for the rest of your stay. Highlights include Fort Cornwallis and the nearby Queen Victoria Memorial Clock Tower; the Cheong Fatt Tze Mansion (aka the Blue Mansion); the ornate, intricate Hokkien clan house Cheah Kongsi; and the Pinang Peranakan Mansion, exemplary of the opulent lifestyle of a rich Peranakan or Straits-born Chinese.

Alongside all of these fascinating historic buildings, there is a collection of public art for which George Town is also well known. Penang is celebrated throughout Malaysia for its delicious street food. Here, visitors can try excellent examples of local favourites such as char kway teow, mee goreng, nasi kandar and Penang laksa. For everything under one roof, one of the most famous hawker centres is the Cecil Street Market. To ensure you get a good plate, one rule of thumb is to stick to places that have a healthy crowd of people inside or queueing up; more often than not, it’s worth the wait. For a more formal dining experience, try the recently reopened Loke Thye Kee. Housed within Penang’s oldest purpose-built restaurant, it opened in 1919 and is well known to locals as a venue for celebrations and special occasions.

A good night’s sleep is essential to enjoy any holiday and George Town offers a wide range of places to stay. As a staple of the backpacker circuit and a favourite with Malaysians, perhaps the best of the affordable options is the Container Hotel. Built from renewable freight containers, the small but modern rooms (and Japanese capsule hotel-style pods) mean there are plenty of options for everyone. On the higher end of the scale is the Eastern & Oriental Hotel, which dates back to 1885 and was opened by the same Armenian brothers who launched Raffles Hotel in Singapore.

1990年代之初，虛擬實境（VR）曾風靡全球。雖然當時親自體驗過這個技術的人並不多，但這個

Back in the early 1990s, the world went crazy for virtual reality. Very few people actually got to experience it, but the idea

set the world on fire, even spawning a number of movies (of varying quality) based on the concept. But then it went away. The equipment was too expensive and the software too primitive, and virtual reality became one of those weird temporary techno-fetishes that would be mostly laughed at in retrospect.

That was until 2012, when a crowd-funded startup company called Oculus VR would bring it roaring back. Promising to use modern screen and processor technology to actually make VR work and widely accessible this time around, the pledge raised more than US$2.5m and generated a huge amount of buzz. Two years later, still long before it had a commercial product, Oculus was purchased by Facebook for US$2bn.

Other manufacturers took note. Although it used Oculus technology, Samsung actually beat Oculus to market, releasing the first Samsung Gear VR at the end of 2015. Oculus was finally made available at the beginning of 2016. HTC released the Vive headset in April last year, while Sony’s PlayStation VR headset came out in October. Finally, VR headsets have come to the masses.

SIX THINGS TO KNOW ABOUT VR

1. It offers immersion like you’ve never experienced before.

VR manufacturers like to talk about something called “presence”. It’s the true sense of immersion and of “being there” that only virtual reality can offer. There’s nothing quite like it, standing in the middle of a simulated world, looking around as if you’re actually there. The new generation of headsets really pulls this off, offering lifelike fidelity.

2. You need a fast computer to use VR. Yes, for the best VR systems you do need some

serious hardware – and not just the headsets. Sony released a new, more powerful version of its console, the PlayStation 4 Pro, with the requirements of the VR headset in mind. On PCs, you need a very powerful graphics

3. Prepare to get hot and sweaty (and maybe look a little silly).

The headsets themselves aren’t light and can get downright sweaty with extended use. More than that, it’s likely you’re going to have to get off the couch. Most VR experiences require a lot of head movement, and use motion controllers like the Oculus Touch or camera-based movement tracking like the PlayStation Camera for control. Of course, standing and waving your arms about is not a great look if you want to maintain your dignity – and it’s almost guaranteed to freak out your pets.

4. VR sickness is a problem. VR’s biggest enemy isn’t really cost or

accessibility; it’s virtual reality sickness, caused by the disconnect between what you’re seeing and what your body is experiencing. Most people will start to feel nauseous after an extended VR session, though the amount of time it takes to feel unwell varies from person to person, and some people don’t experience many issues at all.

5. Games and apps have to be built for it. Related to point four, you can’t just fire up Call

of Duty and play in VR. First of all, the developer has to build support for the VR headset into the game. And just as importantly, the game has to be designed for VR; a regular round of Call of Duty would guarantee cybersickness. Most current software is specifically designed for VR, though there are traditional games being ported over – with modifications to make them work. For example, Bethesda Game Studios is working on a VR version of its popular adventure game Fallout 4 – though instead of walking, you’ll teleport from place to place to avoid motion sickness.

6. It’s not just for games. Although games are the initial driver, there

are plenty of other apps being developed for VR, from virtual touring to real estate, and from adult-oriented fare to industrial design. Netflix has even released a VR app; it doesn’t put you in the movie, but it does put you in a virtual living room with a screen of IMAX-type dimensions on which you can watch Netflix shows. The possibilities are endless – and we’re no doubt going to see a lot of great ideas coming in 2017.

• The PlayStation VR is somewhat cheaper than the HTC

and Oculus devices (at US$400 initially), although it has

a lower screen resolution (960 x 1080 per eye). It uses

the PlayStation Move and DualShock controllers, as well

as the PlayStation Camera for motion tracking.

日本清酒非常獨特，釀造方法跟啤酒相似，但

酒精含量卻可媲美葡萄酒，達到16%，與南澳芭蘿莎谷酒體飽滿的shiraz及美國納帕谷

的cabernet相約。清酒如頂級riesling般芳香迷人，又像西班牙manzanilla般帶少許海洋鹹味。然而，清酒絕無葡萄酒的酸味；它柔滑清澈，細緻迷人，餘韻優

雅，留下一抹柔和溫暖的酒味。

清酒以日本米釀造，釀酒前米粒必先經過碾磨、清

洗和蒸煮。部分蒸煮過的米會用來製麴，米麴製成後

不久便會入瓶，以保持其新鮮味道，只有少量清酒會留

掉外層的澱粉質，只用心白來釀酒，最優質的清酒會

磨去酒米本身大小一半以上。普通清酒有時候會額外

加入酒精（味道或會比較辛辣刺激），酒標註明「純

米」的清酒都不會添加酒精。清酒酒標有時候會像法

國葡萄酒酒標一樣複雜，重點是留意酒廠名稱、品牌

描述、酒的風格和精米度（米的碾磨程度）。最高級的

清酒會寫著「純米大吟釀」，「純米吟釀」次之。

A unique beverage indeed, sake is brewed like a beer with the alcoholic strength of wine – around 16%, which is almost that

of a full-bodied Barossa shiraz or a Napa Valley cabernet. The Japanese drink has the aromatic delicacy of a top-class riesling and the savoury, saline flavours of a Spanish manzanilla. Unlike wine, sake is not acidic, and so has a soft, limpid texture and an intriguingly fine, graceful finish, saying farewell with a gentle alcoholic warmth.

Sake is made from brown rice, which is polished before it is ground, washed and steamed. Some of the steamed rice will be used to make koji, the active yeast that is then used to ferment a mixture of the steamed rice and water. Most sakes are bottled young to capture their freshness, with a few rare batches aged in stainless steel tanks.

Dating back to the third century, sake has a long history, with multigenerational family brewers who are extremely proud of their history. Master sake brewers (called toji) are expert blenders with skills to match the chef de cave of a Grand Marque Champagne house. The key to quality sake is where the rice is grown (similar to the terroir of grapes), how much it is polished and how pure the water is. The finest water comes from melted

snow, with many of the best sakes coming from alpine prefectures.

Polishing is an intricate process that removes unwanted starches, leaving only the very purest rice to be made into sake. The finest sakes are made from rice that has been polished to less than half its original mass. Commercial sake may have extra alcohol added (and it may taste hot and volatile) while those labelled as “junmai” do not. Sake labels can be as confusing as those of some French wines – look for the producer’s name, a brand descriptor, and details of its style and polish level. The highest-grade sakes are labelled junmai daiginjo, followed by junmai ginjo.

Sake shows its best with food, be it a savoury snack such as edamame or more serious dishes. Sushi and sashimi are obvious choices, with the delicacy of the raw fish mirrored by the sake. Yakitori and sake work well together; surprisingly, so does high-grade wagyu beef. Sake should generally be served cool but not icy cold, with only a few aged sakes enhanced by a slight warming. While traditional small ceramic cups are often used, sake shows its best when served in a glass with a good-sized bowl to enhance its pristine perfumes; the Riedel Vinum daiginjo glass is also perfect for sake. The rise of sake appreciation parallels the worldwide enthusiasm for the delicacy and complexity of Japanese food. Visit your nearest izakaya and give it a try soon.

latest spot to hit the district, Mama Malouf, serves

up modern Lebanese fare with flavours that pack a

punch. You can get your traditional falafel and mezze fix

here, but why not try one of the house specialities like

slow-cooked lamb shoulder with farro and pumpkin, or

haloumi and fontina cheese fondue with brioche and

fig jam? The kitchen is open for dinner during the week

and also serves up a Middle Eastern breakfast on the

I am proud to be a member of the TurboJET staff, serving passengers from various parts of the world. Throughout the years, I’ve acquired new knowledge and skills, and with my exeperience, aim to provide a top-quality service for our passen-gers. Their smiling faces are definitely our biggest motivation and acknowledgement for a job well done. In the days ahead, I’ll work hard to ensure the delivery of many more comfortable and convenient journeys.

I’m fortunate to be a member of the TurboJET team. Over the years, I have witnessed the company launching new routes and working hard to bring innovative and quality services, such as the Premier Plus Complimentary Land Transfer Service. As I learn more about passenger expectations, I am able to do more to ensure them a safe, hassle-free, convenient and comfortable journey.

I first joined the company as a cabin attendant and was later assigned to differ-ent posts under the airport routes section. Trying a variety of work experiences was an eye-opener for me, especially serving tourists from around the globe on the airport routes. I’ve witnessed how the company has kept on thriving and striving to provide passengers with quality services. I’ll do my utmost best as part of the TurboJET team.
