Specialized Zone
Texture is only growing in importance as a component of “oishisa (deliciousness),” with commensurate demand for technology to quantify the plethora of mouthfeel. We set up an exhibition area for devices designed to measure texture, in order to aid product development and QC at food companies who constitute the user base for these devices. A concurrently-held seminar on the subject attracted a full house on all 3 days despite the additional fee, indicating a high degree of interest in this particular field.
Food Safety Science Zone
The Food Safety Science Zone had 36 exhibitors, including vendors of additives and laboratory analyzers related to food safety and hygiene, and analysis subcontracting services. A large number of visitors came to exhibitors’ booths and technical sessions in search of information about the science of deliciousness, quality control (QC), and food safety. At the technical sessions, attendees learned cutting-edge information useful for R&D and QC, on 10 distinct subjects. Among these were anti-allergy measures related to functional analysis of food, solutions to microorganisms and food poisoning, risk communication, biofunctionality, and the problem of off-flavors.
“OISHISA” Texture Create Zone
Sports Nutrition Zone
With only 3 years to go until the 2020 Tokyo Olympics, the sports nutrition space is set to actualize in a major way. This zone used easy-to-understand keywords such as “Exercise Meets Eats,” “Power Boosts,” “Recovery,” “Joint Solutions,” “Weight Maintenance,” and “Solving Gender-specific Issues for Female Athletes” to present groups of ingredients in dedicated areas within the zone. The Sports Nutrition Zone also hosted tastings by makers who develop and market sports-related foods and drinks, as well as demonstration of equipment in the health and fitness field. Both of these were major undertakings focused on creating more buzz in this space.

Specialized Zone
Gastrointestinal health has drawn increasing attention over the last few years. The Intestinal Amelioration Zone was built on the concept that a healthy body begins with improved intestinal flora, and provided intensive exhibition for probiotics such as lactobacilli, prebiotics including dietary fiber and oligosaccharides, and synbiotic ingredients that combine the two categories. Specialized laboratory analyzers for testing intestinal health was also exhibited in this zone, as were functional ingredients and supplements with promising implications for intestinal health. Our aim was to present a comprehensive picture, and to that end, we even included secondary material such as diluents and flavor masking additives essential to designing the total product.
Proposed Taste Zone
The circumstances for providing sustenance continue to diversify. Food with added functionality, reduced-salt diet, food products with cost limits. Disaster areas, caregiving situation, institutional meals. Whatever the circumstance, the quality most sought after by people is deliciousness. In order to respond to this need, we created a zone where visitors could see, taste, and hear about ingredients, additives, and services that offer deliciousness in a variety of settings.
Total Beauty Corner
Intestinal Ameliorate Zone
In the recent years, gains have been made on many fronts of research into beauty—both external and internal - through food. The role played by specific ingredients in functional foods are becoming better understood, in multiple beauty - related areas including lightening and improving age spots and wrinkles; hair regeneration; healthy bone, muscle, and physical development; oral care; mental health care; better sleep; immune response; and capillary health. The Total Beauty Corner provided an overview of ingredients, technology, and the most up-to-date knowledge on these subjects, while also exploring the potential for “total beauty”—holistic beauty and health through food. Visitors to this corner were treated to presentations of total beauty supplements, drinks, and foods.
