I hope this newsletter finds you all well. Just a reminder that we are
having a General Membership meeting on Wednesday, December 9, 2015
at 6pm in the City Council Chambers. We will be discussing the budget,
several tentative changes to the Bylaws, and the upcoming negotiations
with the City of Las Vegas.
Also the Holiday party will be on December 11, 2015 at the East Side
Cannery. You will find all the details inside this issue of the newsletter.

Mini Stuffed Jack-O-Lanterns or Halloweegan Peppers
Serves: 2 to 8 servings (depending on the vessel)
Ingredients Squash:
2 gold acorn squashes (see below for other options)
Olive oil
Salt
Black pepper
Instructions For the Squash: 1. If you're going to bake them in a conventional oven, preheat it to 375ºF. 2. Slice off the bottom tip of the squashes to create a flat base. Cut off the tops and use a spoon to remove the seeds.
Save the tops for later! 3. Use a pencil to draw the faces on the squashes, and use a small serrated knife to carve out the faces. Luckily,
carving a small acorn squash is easier than carving a big pumpkin! 4. Brush a little olive oil all over the inside of the squashes and lightly sprinkle them with salt and black pepper. 5. At this point you can choose to bake them in a conventional oven for an hour or until soft, or you can cook them in
the microwave like I did. Place the squashes in a microwave safe bowl, add about ½ cup of water and microwave for 5 to 8 minutes or until soft.
For the Stuffing: 1. Heat the oil in a medium saucepan over medium heat. Add the onions and saute for about 5 minutes or until soft.
Stir in the mushrooms and saute 2 more minutes. Stir in the garlic and saute for just about 30 seconds. 2. Add the vegetable broth, quinoa, nutritional yeast, parsley, salt, and black pepper, to taste. Reduce heat to low,
cover, and simmer for about 15 or until the liquid is absorbed. Keep it covered, remove from the heat, and let the quinoa sit for 5 to 10 minutes. Uncover and fluff with a fork.
3. Spoon the quinoa stuffing into the acorn squashes and cover them with the reserved squash tops. Reheat the finished dish, if necessary, and serve.
Notes For Tiny Appetites: You can make those mini pumpkins instead of the bigger acorn squashes. You can stuff 6 to 8 mini pumpkins with this recipe, depending on their size. Halloweegan Peppers: You can also stuff a carved orange bell pepper. Carve, stuff, and bake in a covered casserole dish at 350 degrees F. for 25 to 30 minutes.
Quinoa Stuffing:
1 tablespoon olive oil
½ cup onion, chopped
½ cup mushrooms, chopped
1 garlic clove, minced
1 cup vegetable broth
½ cup uncooked quinoa
2 tablespoons nutritional yeast
1 tablespoon minced fresh parsley
¼ teaspoon salt
Black pepper, to taste
What You'll Need
4 Rhodes® Frozen Dinner Rolls (from a 3-pound package),
thawed but still cold
4 hot dogs
1 teaspoon yellow mustard
What To Do 1. Preheat oven to 350 degrees F. Coat a baking sheet with
cooking spray. 2. Cut dinner roll dough in half. Roll each half into a 22- to 24-
inch rope. Wrap one rope around hot dog from bottom up, 4-1/2 inches (see photo).
3. Cut a 1-1/2-inch piece off the second rope and set small piece aside. Wrap the second rope around the hot dog from the bottom up, 4-1/2 inches, going the opposite way. Then wrap the 1-1/2-inch piece around the top of the hot dog. Repeat with the remaining hot dogs and dinner roll dough.
4. Place hot dogs on the baking sheet and bake 15 to 18 minutes, or until lightly browned. Remove from the oven, cool slightly and add mustard eyes.

What You’ll Need

Balsamic Reduction
How To Make It
First, slice your tomatoes and olives. Next, using a
spoon, mash your mozzarella pearls (this gives them a
little more texture and makes them a little larger). Then
place your basil leaves out on a tray and layer the
tomatoes, mozzarella and olives on top. The final step
is to drizzle the balsamic reduction on top before
serving. You can serve them plain with toothpicks or
have some chips or crackers on the side. Enjoy!
What You’ll Need •Batch of chocolate cupcakes •White buttercream frosting •2 toothpicks •Tube of black decorator's icing How To Make It Frost the cupcakes. For each cupcake, use the tip of a toothpick to lightly etch the outline of two large Jack Skellington eyes in the frosting. Slowly pipe black decorator's icing onto the etched lines and then fill in the inner circles. Use another toothpick to spread and smooth the icing. Pipe on two short lines for a nose. Next, pipe a long line across the bottom of the cupcake for the mouth. For the finishing spooky touch, randomly top the mouth with a bunch of short icing barbs.
