“Virgilio opta por aproximarse a la gran diversidad de nuestros ingredientes de un modo similar al que utilizaron los pueblos del Ande en tiempos pre-hispánicos: a través del control vertical de pisos ecológicos. Según esta forma alternativa de entender la geografía, se percibe el terreno no como un plano horizontal sino más bien verticalmente, de tal manera que se saca provecho de todo aquello que la flora y la fauna son capaces de ofrecer según las particularidades de cada sistema ecológico. A consecuencia de las dramáticas fluctuaciones del terreno en la región andina, en un relativamente pequeño radio de 100 kilómetros (recorridos a pie sin mayor dificultad por muchos campesinos), se puede acceder directamente a productos procedentes de altitudes variadas que comprenden desde la costa hasta la Amazonía del país.
Motivado por una curiosidad inagotable y por su interés en transmitir la complejidad de su tierra, a Virgilio le apasiona viajar e investigar ingredientes aún indocumentados que puedan aportar todavía mayor riqueza a la cocina local. Para ello, recorre distintos espacios: marino, bajoandino, extrema altura en cordillera, y selvas alta y baja. Además, cuenta con un equipo interdisciplinario que complementa a cada nuevo “descubrimiento” con un necesario contexto que busca trascender lo estrictamente culinario e incursionar en aspectos nutricionales, biológicos, antropológicos.”
“Virgilio chooses to approach the diversity of our ingredients in a manner similar to that used by the peoples of the Andes in pre-Hispanic times: through vertical ecological monitoring. According to this alternative way of understanding the geography, land is perceived not as a horizontal plane but rather vertically, so that it takes advantage of all that the flora and fauna are able to deliver according to the particularities of each ecological system. As a result of the dramatic fluctuations in the Andean terrain in a relatively small radius of 100 kilometers (for many farmers this is not a difficult hike), there is direct access to the country’s products from various altitudes ranging from the coast to the Amazon.
Motivated by an insatiable curiosity and interest in conveying the complexity of their land, Virgilio is passionate about traveling and investigating ingredients that can bring undocumented and yet even more wealth to the local cuisine. To do so, through a number of areas: ocean, lower Andes, extreme altitude, and high and low jungles. He also has an interdisciplinary team that complements each new "discovery" in a necessary context that seeks to transcend the strictly culinary and penetrate nutritional, biological, anthropological aspects.”

Virgilio Martínez sólo tiene tiempo para almorzar de pie. Duerme cuatro horas porque piensa en su cocina de
madrugada. Dirige restaurantes en Lima, Cuzco y Londres. Viaja por los Andes en busca de ingredientes que lo emocionen. Controla desde su teléfono celular los platos que sus cocineros fotografían y le mandan cuando no está en el restaurante, pero nunca se despeina. A primera vista parece más bien que su estado natural es el de un hombre que se acaba de despertar un domingo a mediodía. Mantiene una sonrisa intermitente, como si tuviera la certeza que nada le puede ir mal en la vida, y la cadencia de su voz lo hace parecer demasiado normal para ser un chef sorprendente. Es sospechosamente flaco para dedicarse a la cocina, pensaría cualquiera desde el estereotipo del cocinero glotón. Pero él se cuida. Hace yoga, toma mucha agua, come lechuga. Cultiva su imagen zen. Desayuna una barra de chocolate, nueces, pasas. También se cuida de la noche. Si lo invitan a un matrimonio no va. No quiere que sus comensales lo vean fuera del cuartel a una hora en que se supone que él debería estar de guardia. No le parece serio. Siempre está trabajando mientras la gente se divierte. Por eso, el día de su matrimonio, como se casará con su sous chef, tiene planeado cerrar el restaurante. Para que sus cocineros puedan divertirse juntos por primera vez y toda la noche. Es la única manera que encuentra de ir en paz a su propia boda. Aunque cuando se lo preguntan a Pía León, su futura esposa, ni ella está segura de que él vaya a estar tranquilo cerrando todo un día. La cocina de Central, su restaurante de Lima, es transparente. Desde el comedor, el chef parece flotar por encima del caos. Virgilio Martínez es tan perfeccionista que logra crear la ilusión de que es posible controlar cada detalle de su cocina con tranquilidad. Se le ve dirigir a su ensayada orquesta a través del muro de cristal que separa los dos mundos: el del paladar y el de la alquimia. Su madre fue la arquitecta que diseñó el restaurante. Él quería que ella, que lo conocía suficiente, tradujera sus deseos en el espacio que construirían con los ahorros de toda su vida. Por eso, aquel muro de cristal no solo sería la división entre el escenario y la platea, sino que también permitiría al chef contemplar cada movimiento de sus comensales. En las mesas seis y nueve, como las tienen ordenadas en una grilla, el chef siempre ubica a esos invitados estelares a los que quiere mirar. Así, las reacciones ante cada plato que les llega a la mesa pueden ser evaluadas por el chef desde su calculada ubicación. La cocina es un escenario, pero la de Virgilio Martínez también es una torre de control.
“Falta una hora para que empiece la función en Central. Y falta media vuelta del Sol a la Tierra para que Lima, su segundo restaurante, abra las puertas en Londres mañana. Hoy es la noche que el chef ha estado esperando. Tiene seis horas para impresionar a algunos de los paladares más afinados del mundo, en dos continentes diferentes. Su propuesta culinaria es un viaje desde el Pacífico hasta los Andes, desde los frutos de la Amazonía hasta las hierbas que él mismo ha plantando en un huerto al aire libre que crece sobre la cocina de su restaurante. Su cocina es un laboratorio, pero también una central de abastos que acopia la cosecha de docenas de pequeños agricultores de todo el Perú. Llamarle laboratorio a una cocina es cada día menos esnobismo y más precisión semántica: «los sabores son algo así como acordes químicos, sensaciones compuestas construidas con notas aportadas por diferentes moléculas», dice Harold McGee en su biblia gastronómica La cocina y los alimentos. Por eso, cocinar es escribir partituras con moléculas. Virgilio Martínez ha compuesto más de quinientas piezas, pero dice que conserva menos de cien de esas recetas.
“El chef lleva unos jeans de tubo y una impecable filipina de chef blanca. Se mueve de un lado al otro entre las mesas del salón del restaurante, mientras habla por su iPhone con otro chef que viene en camino con uno de los grupos de invitados. A esta hora de la noche —las nueve— empieza a subir la tensión. Virgilio Martínez dibuja en una hoja de papel miniaturas de cada una de las mesas de Central. Lo hace a toda velocidad y va colocando números en cada una de ellas. Traza ese plano rutinario pero invisible para los comensales que solo verán un plato de comida. El maître le dicta algunos nombres que el chef anota. Luego le indica a su jefe de cocina cómo deberá presentar cada uno de los nueve pasos de la degustación que servirán en breve: es un menú de ochenta y nueve dólares por persona, más setenta y cinco de la degustación de vinos. Pía León es una rubia de enormes ojos azules y su principal cómplice. Podría parecer que la encontró sin salir de la cocina, pero su historia de amor con final feliz no tiene que ver sólo con la obsesión por el trabajo y la imposibilidad de cenas románticas.”

Virgilio Martinez only has time to eat standing up. He only sleeps four hours because he thinks about his kitchen in the
middle of the night. He runs kitchens in Lima, Cuzco and London. He travels through the Andes in search of ingredients that excite him. When he’s not in the restaurant he reviews quality by means of photos sent to his cellular telephone by his cooks, but he never looks disheveled. At first glance he appears to be the kind of guy who has just gotten up at noon on a Sunday. He maintains an intermittent smile as though he were certain that nothing could spoil his life, and a tone of voice that makes him seem too normal to be a surprising chef. Considering the stereotypical gluttonous chef he’s suspiciously thin to be dedicated to the kitchen. But he takes care of himself. He practices yoga, drinks a lot of water, eats lettuce. He cultivates a Zen image. His breakfast is a bar of chocolate, nuts, raisins. He also takes care of himself at night. If he’s invited to a wedding, he doesn’t go. He doesn’t want his diners to see him outside his barracks at the hour he’s supposed to be on guard. He doesn’t appear serious. He’s always working while everyone else is having fun. Because of this, the day of his marriage, when he marries his sous-chef, he plans to close the restaurant. So that for the first time his cooks will be able to have fun all night. It’s the only way for him to go peacefully to his own wedding. Although when Pia Leon, his future wife, is asked about it, she’s not even sure he’ll be happy closing the restaurant the entire day. The kitchen at Central, his restaurant in Lima, is transparent. From the dining room the chef seems to float above the chaos. Virgilio is such a perfectionist that he’s managed to achieve the illusion that it’s possible to quietly control every detail of what’s happening in the kitchen. He’s seen conducting his tested kitchen through a crystal wall that separates two worlds: that of the palate and that of the alchemist. His mother was the architect who designed the restaurant. He wanted her to transform his desires into the space which they would construct with a lifetime of savings. And so the crystal wall would not only be the division between the stage and the audience, but would also permit the chef to contemplate the movement of each of his guests. At tables six and nine, as they are arranged on the dining room grid, the chef always puts the invited stars whom he wants to watch. That way, the chef can observe their reactions to each arriving plate from his calculated vantage point. The kitchen is the stage, but Virgilio’s is also the control tower.
“It’s only one hour until the restaurant opens. And half a day till Lima, his second restaurant, opens its doors in London tomorrow. This is the night the chef has been waiting for. He has six hours to impress some of the most discerning palates of the world, on two different continents. His culinary offering is a journey from the Pacific to the Andes, from the fruits of the Amazon to the herbs that he himself planted in an open-air garden that grows above the restaurant’s kitchen. His kitchen is a laboratory, but also a central of supplies that gather the harvests of dozens of small farmers from all over Peru. To call a kitchen a laboratory is less and less snobby and more semantic precision: ‘the flavors are something like chemical chords, sensory compositions constructed with notes contributed by different molecules.’ Virgilio Martinez has composed more than five-hundred pieces, but says he keeps fewer than one-hundred of those recipes.
“The chef wears straight-leg jeans and an impeccable white chef’s jacket. He moves from one place to another among the tables in the restaurant’s dining room while talking on his iPhone with another chef who is on the way with one of the invited groups. At this hour of the night – nine – the tension begins to rise. Virgilio Martinez draws each of Central’s tables in miniature on a piece of paper. He does it quickly and notes the number of each table. He routinely traces his plan, invisible to his guests who will only see a plate of food. The maitre-d’ dictates several names which the chef writes down. Then he indicates to his chef de cuisine how each of the soon-to-be-served nine courses must be presented. The menu costs eighty-nine dollars per person, an additional seventy-five for wine pairing. Pia Leon is a blonde with enormous blue eyes and his principle accomplice. One gets the impression that he could have found her without leaving the kitchen, but their love story with a happy ending isn’t only about an obsession for work and the impossibility of romantic dinners.”
