Transcript of Sui colli di Parma - CRAL Cariparma · Dopo secoli di agricoltura tradizionale di pura sussistenza,...
In his Mediaeval Chronicles, Friar Salimbene de Adam called this land
“Li monti de le vigne” (“The mountains of the vineyards”).
Rolling hills lying on the right bank of the River Taro and crossed by
Via Francigena, the ancient path of the Romea road that for centuries
united Europe with Rome.
Since then the chronicles have been attesting in this area to the presence
and passion for the wine business, that has always yielded good fruit.
Sui colli di ParmaOn the hills of Parma
After centuries of traditional purely subsistence agriculture, there began in the nineteenth century
a decisive process renewal: the itinerant Agriculture Chair of the University, the Farmers’ Association
and other institutions engaged their professors in passionate practical demonstrations.
Their advice and studies were endorsed by some local landowners, who developed and introduced
modern agricultural techniques of French origin, they imported vines from France and invested
resources, time and passion to establish the local production of wine and take it to a constant
and high level of quality.
The cultivation of the vine spread and the hills fi lled up with neat rows until the arrival of the war.
With the destruction of numerous vineyards due to the arrival of phylloxera, the agricultural production
in the period between the wars was directed, also for political decisions, to cereal production.
Thus wine returned to the simple home consumption and only a few small cellars or taverns remained
devoted to retailing, mainly at a local level.
The situation remained stationary even after the Second World War, but the habits on how to cultivate
and nurture the vines were handed down from father to son, so as to improve cultivation techniques
and wine making with the use of new tools.
The history of this land
In 1983 Andrea Ferrari started his business venture upon these hills by
founding Monte delle Vigne. At the basis of his plan there was the belief
that he could produce great wines, working with local grape varieties,
in an area with a high wine vocation.
Nabucco was born in the early nineties, a great red wine aged in oak
barrels for 12 months and for another 12 in the bottle, the wine which had
always been dreamed about and which immediately began to make the
Monte delle Vigne brand known. Nabucco was then fl anked by Callas, a
pure still vinifi ed Malvasia, for the fi rst time in Parma, and aged in stainless
steel for six months, characterized by an intense yet elegant aroma.
The foundation of Monte delle Vigne

In 2004 Paolo Pizzarotti joined the company as major shareholder,
a businessman in the building sector. He brought along a farm of 100
acres, forty of which were progressively planted as from 2005.
At the end of 2006 a new cellar was inaugurated, underground, designed
and engineered to be a perfect synthesis between architectural aesthetics
and productive functionality.
Today Monte delle Vigne has 60 hectares of vineyards superbly exposed
and located in the heart of the DOC (of controlled origin) Hills of Parma.

winemakers.
A company founded from a passion for wine combined with the continuous
striving for excellence.
maturazioni perfette, mentre l’elevata escursione termica giorno/notte, creata dalle
Rolling hills, soft features lines that from 300 meters descend to the right bank
of the River Taro. Deep, marly soils, rich in limestone and clay, strongly mineral,
which allow the grapevine to develop structure, intensity and aromas.
Exposure to the east for white grapes and to the west for the red grapes allow
for perfect ripening, while the high day / night temperature range created by the cold
currents coming down from the 1050 meters of the Cisa Pass, give the grapes
elegance and aromatic fi nesse.

Our vineyards
Il rispetto dell’ambiente signifi ca ottenere prodotti di alta qualità;
To us respect for nature and tradition means the protection of a heritage
that is part of our culture and our identity.
Respecting the environment means obtaining high quality products;
now and in the future this is an indispensable contribution to our wellbeing
and our children.
These principles, upon which our company bases its mission, are used
in adopting and embracing the photovoltaic technology and the IPM
(Integrated Pest Management) project certifi ed and supported by the
European Community, which provides, in managing the vineyards, the use
of agricultural production techniques allowing to minimize the use
of chemicals and pesticides, reducing to the lowest levels possible
the environmental impact. Finally, the manual collection allows the grapes
to reach very quickly the fermentation tanks without being minimally
damaged by mechanical equipment.
Soon with the activation of the conversion to organic farm and winery,
we’ll move a new, decisive step in that direction, pointing out clearly on the
adoption of a fully sustainable development model, perfectly integrated
with the environment that welcomes us.
Sixty hectares of sustainable viticulture
The cellar, a perfect blend of architectural aesthetics and production capabilities, is designed to
process all our grapes with care and kindness.
Beneath the ground, with a constant underground temperature, a space that can accommodate
up to 700 barrels and a fully automatic bottling plant that makes quality key rate to the
fi nal stage of processing.
The small stainless steel tanks and French oak barrels must accompany the fi rst and then
the wine through a slow evolutionary process that will make them unique and exciting.
Tecnologia per la qualità
Quality Technology
The cellar we intended, imagined, loved even before it existed. It is the container
where winemaking and oenology meet, the place where the two practices are
so different but so close to merge, for this new wine of excellence.
It is the place where nothing is random, where every action has a deep meaning
and where the execution of each gesture is crucial for obtaining high quality.
It is here that we receive our guests, to share with them the emotions that are
the basis of our work and our being producers.
