Chilis

bringen Schärfe in die Küche. Die bekanntesten Sorten sind Jalapeno-Chilis, Peperoncini und Peperoni. Je kleiner und roter die Schoten, desto schär-fer sind sie.

Currypulver

ist eine Mischung aus 12-20 verschiedenen Gewürzen (z. B. Ingwer, Kardamom, Cayenne-pfeffer und Kurkuma) und schmeckt mild-aromatisch bis feurig-scharf. Currypulver soll-ten Sie nicht zu heiß anbra ten, denn es wird sonst bitter.Laurus nobilis

Chilli peppers

Add a hot, spicy taste to cooking. The best-known sorts are jalapenos, pepperoncini and bell peppers. The smaller and redder the husks, the hot-ter they are.

Curry powder

Is a mixture of 12-20 different spices (e.g. ginger, cardamom, cayenne pepper and turmeric) and ranges in taste from mildly aromatic to scorchingly hot. When cooking with curry pow-der, you should never let it get too hot, as otherwise it beco-mes acrid.

Coriander

Is similar in taste to dried orange peel.

Cumin seed

Has an aromatic, spicy taste, a bit hotter than caraway seed and is best for Mediterranean meat dishes and also for vege-table dishes.

Should always be used sparin-gly, as otherwise its own taste can overpower the food. It goes well with cabbage, pota-toes, roast pork and stews.

Bay leaves

Primarily used to season mari-nated beef, fish brews and game. Please do not eat the leaves.

Nutmeg

Available as whole nuts or ground. Has a fiery, spicy, slightly acerbic taste and is used like mace.
