THROUGHPUT / PROCESS
• Process: Cooking the Kwek Kwek• Boil the Quail Eggs• Remove egg shells • Combine the cornstarch, all-purpose flour, salt, and pepper• Dilute the anatto powder in water and combine the liquid with
the first mixture.• Put the boiled eggs in the mixing bowl and coat with the batter.• Heat the pan and pour cooking oil.• Deep-fry the eggs until the coating is crispy. • Serve with vinegar or sweet chili sauce.

• Selling• Sold per piece in a stick/ at a rectangular paper plate/ inside a
plastic cup for take outs• To be dipped in vinegar/sweet sauce/spicy sauce• The cook is also in charge of selling and getting orders from
customers• Sometimes the kwek kwek is pre cooked and gets heated once
the customers order to avoid a long waiting time in between orders

DeliveryProduct is cooked as they are ordered, or
in advance in anticipation of peak hours. Customer has the option to heat it again thru deep fry.

SUGGESTED IMPROVEMENTS
• Improved Packaging for the Kwek Kwek and Vinegar, make it easier to do take out orders
• Develop new dips / sauces for the Kwek Kwek
• Add new flavors to the batter (Spicy, Barbeque, etc..)
• Improve marketing by having a sound system that will attract more customers
• Offer a free drink (sago/gulaman) for every 50 pesos spent by the customers
• The cart should be attractive and the vendor can have a uniform that will attract more consumers
