conforma la muestra que se exhibe en el Paseo de
las Artes del Palacio Duhau - Park Hyatt Buenos
Aires durante el verano 2011.
Dinámica, y con una narrativa que busca conectar
desde el arte con la atmósfera estival que recorre
la ciudad de Buenos Aires en estos meses, “Arte
de Estación” invita a curiosos y amantes del arte
a disfrutar de un recorrido propio de artistas
jóvenes, con una mirada que pretende, y logra,
combinar la aplicación de los colores, sin formas
aparentes, con escenarios típicos de este período
del año.
De Sara García Uriburu Galería de Arte, las obras
estarán exhibidas hasta la proximidad del otoño
porteño.

El verano en Mendoza se vive con actividades de aventura,
montañismo y agua, sin que pueda faltar la cita obligada con las
bodegas y el mejor vino. Quienes visitan la ciudad encontrarán
renovado el paisaje por el verde de los árboles que dan frescura a la
temporada estival y el canto alegre del agua que viene de la montaña
a llenar las nobles acequias mendocinas.
Para los que buscan vivir plenamente la montaña y los ríos andinos,
Mendoza ofrece actividades como cabalgatas, trekking, rafting o
canopy, pero el protagonista indiscutible de la temporada es el
Aconcagua, que recibe a montañistas de todo el mundo que buscan
hacer cumbre cada año, entre el 15 de noviembre y el 15 de marzo.
Finalmente, hay una cita obligada para visitar las bodegas que en esta

ituada al sur de la ciudad capital de la provincia de
Mendoza, hay que viajar solo 232 km para encontrarse con
este oasis de formaciones precordilleranas, ríos caudalosos, valles y
viñedos. San Rafael recibe al turista con actividades apasionadas y
apasionantes, como vertiginosos raftings por el Cañón del Atuel,
windsurf, mountain bike o parapente. Y el no menos tentador
Camino del Vino. Pesca o fotografía son hobbies perfectos para
desplegar en esta región, plena de paisajes bellísimos y espejos de
agua, como los diques El Nihuil o Los Reyunos, enmarcados por
montañas y verde fronda.
Pero la industria que aquí nos convoca es la vitivinicultura, que
hoy también abre sus puertas a los visitantes, con degustaciones,
restaurantes y actividades sensoriales. Solo es necesario averiguar
horarios y disponerse a gozar del paisaje de viñas, aprender acerca de
los vinos argentinos y disfrutar de una degustación. Comencemos,
pues, a transitar bodegas…
por El camino dEl Vino
La Bodega Goyenechea fue fundada el año 1868 por Santiago y Narciso
Goyenechea, inmigrantes vasco-españoles. La marca tradicional fue,
y es, una de esas constantes en las mesas argentinas, que prosigue
ofreciendo calidad desde hace 140 años. Actualmente, sin dejar de
lado lo clásico, se renueva con opciones para el consumidor joven.
En 1993, Bodega Goyenechea funda e integra el primer Consejo DOC
de la Argentina, y es la primera bodega americana que exporta un
vino con Denominación de Origen –Chardonnay 93–. Hoy tiene
en sus líneas un vino premium, el Quinta Generación 2007 Malbec,
con 18 meses de barrica francesa y 14 meses de estiba en botella, y
la bodega recibe turistas en una nueva sala de degustación.

hobbies to display in the region, with an immensity of beautiful landscapes
and water features, such as the dams on El Nihuil River or Los Reyunos,
set against the backdrop of the mountains and lush greenery.
But it is winemaking that we are intersted in, where guests are welcome
to enjoy tastings, visit restaurants and experience sensorial activities. All
you need is to find out the timings and then take in the landscape of the
vineyards, learn about Argentine wines and take part in a wine tasting. So,
let´s travel the vineyards.
on thE roAd of winE
Bodega Goyenecha was founded in 1868 by Spanish-Basque
immigrants, Santiago and Narciso Goyenechea. The traditional brand was,
and still is to this day, a must at Argentine tables, which has been offering
quality for 140 years. At present, without neglecting the classic style, it
has renovated itself with options aimed at the young consumer. In 1993
Bodega Goyenechea founded and started the first DOC Council of
Argentina, becoming the first American winery to export a wine with
Denomination of Origin – Chardonnay `93. Today it counts with a
premium wine, Quinta Generación 2007 Malbec, with 18 months in
French oak and 14 months storage in bottle. The winery will hosts tourists
at a its brand new tasting room.
The history of the viticulture in San Rafael and its road of winemaking
estates lives on; its protagonists are well established families that feel a

visitamos otra bodega emblemática: Familia Roca. Cuatro generaciones
dedicadas a hacer vinos de alta calidad con su atractiva y pintoresca
bodega familiar ubicada en la región de Cañada Seca. Aquí, Alfredo
Roca continúa, junto a sus hijos, la tradición de sus padres y abuelos,
de obtener uvas premium a partir de los viñedos de sus tres fincas.
Familia Roca pone énfasis en la uva Pinot Noir, que logra en San
Rafael una gran expresión y es la base de la línea Alfredo Roca Reserve,
de partida muy limitada. Se trata de un vino con paso por barrica más
prolongado y con mayor potencial de guarda.
Rivier Family´s Winery and Vineyards es la empresa originada
por el suizo Jean Rivier, llegado a la Argentina en 1956. Rivier
trabajó como viticultor y, tiempo más tarde, compró la bodega
y así logró cumplir el sueño de producir uvas y elaborar luego
sus propios vinos, tenaz vocación que hoy continúa en la familia
de viticultores criadores. Como casi todas las bodegas pioneras,
comenzó con vinos finos en damajuana, pero en 1993 inició el
camino de la botella. Hoy es una bodega artesanal y sus vinos
DOC se encuentran únicamente en vinotecas y clubes de vinos.
Carlos Rivier es el hacedor de los productos de Rivier, entre los
que destacamos el Tocai Friulano Roble, un cepaje blanco que
encontró en San Rafael un hogar y un terruño.
Corría 1870 cuando José Lavaque plantó sus primeras vides en Salta.
Fundó, de esta forma, una empresa, en Cafayate, pero años más tarde
el Grupo Lavaque originó otra bodega en Cañada Seca, Villa Atuel
y Bella Vista de San Rafael, Mendoza, iniciada por Félix Lavaque
y Rodolfo Paolucci. El grupo está dirigido actualmente por la
quinta generación de la familia, con una política de innovación,
integración y expansión. La empresa adquirió en el año 2006 la
centenaria bodega sanrafaelina Suter. A cargo de los vinos premium
passion for what they do. Continuing the road, we stopped at an iconic
winery: Familia Roca. Four generations dedicated to making high-end
wines at their attractive and picturesque family winery located in the region
of Cañada Seca. Here Alfredo Roca, carries out his work with his children,
following the traditions of his parents and grand-parents to obtain premium
grapes from the vineyards at his three estates. Familia Roca concentrates on
its Pinot Noir grape, making a great statement in San Rafael, being the
base of the limited edition Alfredo Roca Reserve. It is a wine with a
long stay in oak, which will keep nicely.
Rivier Family’s Winery and Vineyards is the making of Swiss Jean
Rivier, who arrived in Argentina in 1956. Rivier worked as viticulturist
and later on he bought a winery, thus fulfilling his dream of producing
grapes and creating his own wines, at his own family farm. Like most
pioneering wine estates, he started out producing fine wines in garrafes, but
in 1993 he started using bottles. Today we are in the presence of an artisinal
winery and its wines with DOC are only found in oneotheques and wine
clubs. Carlos Rivier is the maker of the products Rivier; we should mention
Tocai Friulano Roble, a white grape that has found in San Rafael its
home and its terroir.
It was 1870 when José Lavaque planted his first grapes in Salta. He
then founded a company in Cafayate, but years later the Lavaque Group
created a new winery in Cañada Seca: Villa Atuel and Bella Vista, at San
Rafael, in Mendoza, started by Félix Lavaque and Rodolfo Paolucci. The
group is actually run by the fifth generation of the family, upholding a policy
of innovation, integration and expansion. In 2006 the company acquired
the centenary winery from San Rafael, Suter. In charge of the premium
wines of both wineries is Pancho Lavaque, viticultor and enologist. Suter is
a classic for Argentinians, making wines since 1897, as a result of the hard
work and vision of Otto and Ana Suter, who arrived in Argentina with a
wave of Swiss immigrants, settling down in San Rafael. Today, Suter still
offers good wines, like the Suter Reserva Malbec 2008, a purplish red,
with good structure and friendly tannins.

vinos en 1897, debido al esfuerzo y la visión de Otto y Ana Suter,
quienes llegaron a la Argentina con una corriente de inmigrantes
suizos, instalándose en San Rafael. En la actualidad, Suter prosigue
ofreciendo buenos vinos, como el Suter Reserva Malbec 2008, rojo
violáceo, estructurado y de taninos amables.
La bodega Casa Bianchi, Familia de Vinos, se debe al impulso y la
visión de Enzo Bianchi y Aurelio Stradella, quienes la fundaron
en 1928. Posteriormente, Valentín Bianchi y Ricardo Stradella
continuarían los pasos comenzados, dando prioridad a la calidad
de sus finos vinos y equipando a la bodega con alta tecnología.
Hoy sus productos son, para los argentinos, un símbolo de aquella
privilegiada región mendocina.
La bodega toma el nombre de Valentín Bianchi al incorporar a los
hijos de Don Valentín. Pero aún faltaba dar otro paso. Los Bianchi
recorren investigando las zonas del champagne en el mundo y
encuentran en la misma San Rafael el terreno ideal para su nuevo
proyecto, donde vuelcan lo visto y aprendido en Europa.
En 1996, nace la Champañera, impactante edificio, con una “nave”
de 2000 m2 bajo tierra, lo que facilita el mantenimiento de una
temperatura constante de 15º C durante todo el año.
La línea de espumantes se vuelca al gusto argentino del Champaña
Brut. El vino selecto que elegimos es el Enzo Bianchi 2003. Y, sin
dudarlo, podemos afirmar que el producto premium Stradivarius es
uno de los espumantes más elegantes de la Argentina.
The winery Casa Bianchi, Familia de Vinos, owes its life to the drive and
vision of Enzo Bianchi and Aurelio Stradella, who founded it in 1928.
Later on, Valentín Bianchi and Ricardo Stradella would follow the road
travelled, with great attention to the production of fine wines and gearing
the winery with top technology. Today, its products are for the Argentines,
symbols of that privileged region of Mendoza.
The winery takes the name Valentín Bianchi when the offspring of Valentín
Bianchi joined in. But there was still something that needed to be done.
The Bianchis toured the champagne regions around the world but found in
their own land, San Rafael, the ideal terroir for their new project, where they
adapted what they have seen and learned in Europe.
In 1996 the Champañera is born, a stunning building, with a space of
2000 m2 under the ground, allowing them to keep a constant temperature
of 15ª C all year round.
The sparkling wines satisfy the Argentine taste for Champagne Brut. The
select wine we have picked is the Enzo Bianchi 2003. And without any
doubt, we can conclude that the premium product Stradivarius is one of the
most elegant sparkling wines in Argentina.

o que impacta de Richard Geoffroy y que trasunta en
palabras y gestos es su pasión, ese compromiso que denota
al hablar de su champagne. Porque es, sin duda, su creación. Pese
a contar con un equipo de expertos enólogos, la última palabra
es la suya. Y esto, según él, tiene que ver con la inspiración, con
la creación e implica cada vez un nuevo desafío. Cada vintage de
Dom Pérignon es único, irrepetible, mejor que el anterior y, a la
vez, un tributo al genio del monje visionario. Es que la hermosa
misión del enólogo es reinventar la alegría de las burbujas perfectas
y, desde 1990, cuando comenzó la producción de Dom Pérignon
Cuvée, Richard Geoffroy está inmerso en esa tarea.
Nacido en 1954 en la ciudad de Vertus, en medio de los viñedos
de Chardonnay en la Côte des Blancs, Geoffroy es parte de una
larga tradición de viticultores de Champagne. Luego de recibir su
Doctorado en Medicina en 1982, se inscribió en la Escuela Nacional
de Enología de Reims, para renovar su pasión por su primer amor.
En 1985, se incorporó al Departamento de Vinicultura de Moët &
Chandon.
la EnotEca
La enoteca de la bodega guarda celosamente las muestras de
cada cosecha. Una de las tareas del chef de cave es conservar la
memoria y el estilo de Dom Pérignon, identificado con cada botella
de champagne. Por eso, el programa de la enoteca que se inició
con la cosecha de 1990 es una exploración personal y perpetua
de cada cosecha, porque la acción del tiempo en las botellas sigue
albergando misterios y sorpresas.
En la enoteca, la vida y el añejamiento de cada vino continúan a
lo largo de los años y las décadas. El champagne experimenta un
renacimiento con cada metamorfosis realizada por el tiempo y es el
chef de cave quien explora estos cambios para extraer conclusiones
que luego volcará para perfeccionar próximas ediciones. “La
enoteca de Dom Pérignon es la expresión por excelencia de un vino
que desafía al tiempo”, explica.

Este proceso comienza en la viña con la calidad de la uva. Prosigue
con la forma de manejar el blend y culmina en la cava. Geoffroy
aclara: “Simplemente (como si fuera realmente simple) tiene que
ver con la precisión. Es hacer lo correcto”. Se declara fanático de
la calidad de la fruta y sigue criterios de selección muy estrictos,
a tal punto que suelen desechar el 40% de la cosecha. Cada 4000
kg de uva se extraen 2500 l, pero sólo 2000 van al champagne.
En cuanto al blending, aquí también se busca la perfección. “Crear
lo excepcional significa no hacer ninguna concesión”, afirma el
enólogo.
dom Pérignon 2000
Es una cosecha excepcional, cuyas uvas fueron recolectadas a fines
del siglo XX, de los ocho “grands crus” de Dom Périgon junto al
“premier crus” Hautviller. Se buscó equilibrio y balance entre la
Chardonnay y la Pinot Noir, una línea muy frágil que Geoffroy
compara con el Ying y el Yang. Este paso lleva unas dos a seis semanas
de trabajo y la participación de cinco enólogos. Según Richard
Geoffroy se volvió a las bases, al estilo clásico, pureza de sabores, al
muestreo de pasiones que hace a la esencia de Dom Pérignon.
En la cata, el enólogo comparte sus sensaciones con metáforas
elegantes llenas de poesía: “El primer paso por nariz revela un
mundo vegetal y acuático, con notas de pimienta blanca y gardenia.
La madurez hace luego una parición suave antes de exhalar acentos
de turba. En boca el ataque es directo, preludio de una redondez
lujuriosa que parece ondularse como una planta. La nota de anís y
jengibre seco se desliza sobre las cáscaras de fruta (mango y pera).
El final se despliega y luego se aplaca, calmo y apacible, maduro y
difuso”.
En nuestra opinión, el Chardonnay y el Pinot Noir se combinan en
un ataque que brinda la frescura justa, la elegancia, el toque etéreo
y la dulce sensación que proviene de la fruta. Es seco, intenso, con
una cremosidad absolutamente sensual y apetecible.
which identifies each champagne bottle. That is why the oenoteques´
program that started with the vintage of 1990 is a personal and perpetual
exploration of each harvest, since the action of time in the bottle keeps
storing mysteries and surprises. At the wine library, the life and ageing of
each wine is prolonged for years and decades. Champagne experiences a re-
birth in each transformation made by time, and it is the Chef de Cave who
observes these changes to draw his own conclusions that would later be used
to perfect the next edition. “Dom Pérignon´s oenotheque is a clear example
that wine defies time”, adds Geoffroy.
thE CrEAtion
This process starts in the vineyard with the quality of grapes and it goes on
with the way of managing the blend that concludes in the cellar. Geoffroy
states: “It simply (as if it were simple) has to do with precision; it is about
doing the right thing”. He says he is a fan of fruit quality and he is very
strict when it comes to selection standards, to such an extent that many times
they shed 40% of the harvest. Every 4000 kg of grapes they draw 2.500
liters, but only 2000 are used for champagne making.
As for the blending, here perfection is also sought after. “Creating the
exceptional means to make no concessions” stresses the enologist. Dom
Pérignon 2000
An exceptional harvest when the grapes were picked at the end of the 20th.
Century, from eight Dom Perignon “grand crus” and Hautviller´s “premier
crus”. The winery looked for a balance between Chardonnay and Pinot
Noir, a very fragile blend that Geoffroy compares to the Ying and the Yang.
This process involves five enologists working from two to six weeks.
According to Richard Geoffroy it was a return to basics, to the classic styles,
to purity of flavors, to a sampling of passions that are at the core of Dom
Pérignon. In the tasting process the enologist shares his sensations using
elegant metaphors, full of poetry. “The first stage on the nose reveals a
vegetable and aquatic world, with notes of white pepper and gardenia. Upon
ageing, it gently exhales notes of peat. On the
mouth the attack is straightforward, a prelude to a sexy roundness that
seems to undulate like a plant. The aniseed and dry ginger nuances slides
over fruit skins (mango and pear). Vast on the finish and then quiet, calm,
peaceful, mature and diffused”.
We believe that Chardonnay and Pinot Noir combine to produce an attack
that gives the right freshness and elegance, the subtle touch and the sweet
sensation of the fruit. Dry, intense, with a sensual and delectable creaminess.

Después del 911, el Boxster/Cayman y el Cayenne, el Panamera
es la cuarta gama de modelos Porsche de la que se comercializarán
inicialmente tres modelos con un motor V8. Posteriormente estará
disponible un modelo con motor V6 y un Panamera con una
transmisión híbrida. El actual modelo inicial es el Panamera S con el
motor de 4,8 litros y 400 CV y la tracción a las ruedas posteriores.

a back spoiler that is automatically activated with adjustable inclination,
and the first Sport Chrono package: a control that drops the speed,
changing the ride and shifting gears by simply pushing a button.
The dual-clutch (Porsche-Doppelkupplungsgetriebe) flaunts the Launch
Control function that ensures maximum acceleration.
thrEE modEls
After the 911, the Boxster/Cayman and the Cayenne, the Panamera
is the fourth Porsche that will be available in three versions with a V8
engine. Later on you will find a V6 model and a Panamera with hybrid
transmission. The current initial model is the Panamera S with a 4,8 lt
engine and 400 HP and rear drive. For the first time we encounter a six-
speed manual gearbox; there is the option of the dual-clutch PDK (Porsche-
Doppelkupplungsgetriebe) with seven gears. The Panamera S offers great
acceleration and efficient consumption. The Gran Turismo does 0 to 100
km/h in 5,4 seconds without altering traction and it complies with Euro
5 doing 10,8 lt every 100 kilometers(CO2: 253 g/km). The top speed is
283 km/h geared with the PDK box and 285 km/h with manual shift.
The Panamera 4S also boasts a V8 engine of 4,8 lt and 400 HP. The

4,2 seconds. The top velocity is 303 km/h, consuming 12,2 lt every 100
km and the CO2 emissions of 286 g/km.
THE DESIGN OF THE PANAMERA
The designers at Porsche have been able to make the Panamera a model of a
vehicle, totally new and independent, which can be identifiable at first sight as a
Porsche car. The Panamera makes a statement for its proportions: wider and nearer
to the ground in relation to its four-door rivals, really revealing the unique exterior
lines of this Gran Turismo that measures less than five meters long.
It keeps in line with size, style, and the many design concepts that have been
constantly improved over the last decades in the 911 Carrera, the Boxster, the
Cayman and the Cayenne. The Panamera´s perks are clearly seen when you open
the trunk. The hatchback door, when opened, reveals a cargo area where four mid-
size bags can be stored behind the back seats.

n diciembre de 1935 nació en Brooklyn el primer
hijo del matrimonio judío ortodoxo constituido por
Martin Konigsberg y Nettea Cherry. Lo llamaron Allen Stewart
Konigsberg, nombre que le duraría hasta su adolescencia, cuando el
joven decidió rebautizarse como Woody Allen.
Fue un estudiante mediocre interesado únicamente en los cómics,
la música y las películas. Al finalizar el colegio, estudió Cine en la
Universidad de Nueva York, pero decidió abandonar a los pocos
meses y autogestionarse, logrando que aceptaran sus libretos
cómicos en algunos programas de televisión.
En 1956 se casó por primera vez. Fue con Harlene Rosen,
matrimonio que perduró hasta 1962. Por ese entonces, Allen ya
había lanzado su carrera solista, consiguiendo bastante éxito con sus
apariciones televisivas, sus discos de humor y sus presentaciones en
Greenwich Village.
Su primer guión, What’s new Pussycat?, fue rodado en 1965 y Allen
hizo un papel secundario. Para 1966, debutó como director con
What´s up Tiger Lily?, film del que renegaría poco después. Como
contrapartida, contrajo nuevo matrimonio con la actriz Louise
Lasser, que duraría hasta 1969, año de la primera película que le
enorgulleció dirigir: Robó, huyó y lo pescaron.
Le siguieron Bananas (1971) y Todo lo que usted siempre quiso saber
sobre el sexo y nunca se atrevió a preguntar (1972). Ya en pareja con
Diane Keaton, juntos protagonizaron sus películas El dormilón

movies. When he finished school he studied filmmaking at the University

played only a secondary role. By 1966 be made his debut as director with
What`s up Tiger Lily? a film he would later on disapprove of. He then
married again to actress Louise Lasser, a relationship that would last until
1969, the year when he directed the first movie he was proud of directing:
Take the Money and Run. It was followed by Bananas (1971) and
All that you always wanted to know about sex and never dared
ask (1972). Now being Diane Keaton’s partner, they co-starred in The
Sleeper (1973), Boris Grushenko`s Last Night (1975) and the
crowning film Annie Hall (1979) that gave him four Oscars which Woody
Allen never bothered to receive, as he played the clarinet with his band every
Monday at the Carlyle Cafe in New York. Always next to Keaton, the list
became longer with two scripts nominated for the Oscar: Interiors (1978)
and Manhattan (1979), a magical black and white movie considered to be
a classic in the history of filmmaking.
The new decade would start out with Stardust Memories (1980) and
A midsummer night’s sex comedy (1982), the first film starring his
new sentimental partner, Mia Farrow, who would also join him in the
experimental Zelig (1983), in Broadway Danny Rose (1984), and in

the witty Purple Rose of Cairo (1985), nominated to the Oscar for its
script, and in the much acclaimed Hannah y and her sisters (1986), that
clinched the Oscar for its script (it also received other 7 nominations). Then
it was Radio Days (1987), September (1987), Another Woman
(1988), Crimes and Misdemeanors (1989), Alice (1990), Shadows
and fog (1991) and his autobiographical film Husbands and Wives
(1992), which described the end of his life with Farrow and the start of his
highly controversial relationship with the latter’s adoptive daughter, Soon-
Yi-Previn, who became his third wife in 1997.
In Manhattan Murder Mystery (1993) he starred once again next
to Diane Keaton and with Bullets over Broadway (1994) he was
nominated 7 times for the Oscar. Then followed other movies worth
forgetting: Powerful Aphrodite (1995), Everyone says I love you
(1996), Deconstructing Harry (1997), Celebrity (1998), Sweet and
Lowdown (1999), Small Time Crooks (2000) and The Curse of the
Jade Scorpion (2001), Hollywood Ending (2002), Anything else
(2003) and Melinda & Melinda (2004).
Allen decided to shoot in London and he managed to make a comeback
in 2005 with Match Point, starring his new muse, Scarlett Johansson;
then he did the not quite successful Scoop (2006) and the recently Vicky
Cristina Barcelona (2008) filmed in Spain, next to Penelope Cruz. The
list ends with Cassandra`s Dream (2007) and with Whatever Works
(2009), not premiered yet, which has taken him back to New York. For
next year, the prolific director plans to make a long-planned dream come
true: to film in his loved city... Paris.

laman la atención las maravillosas escenas campestres que
plasmó en el lienzo el pintor Prilidiano Pueyrredón. En ellas
se ven los personajes típicos de los suburbios bonaerenses entre 1850
y 1870. Uno de los detalles característicos en algunas obras es que
los paisanos lucen sus caballos con hermosos emprendados. Era algo
que el gaucho cuidaba mucho de acuerdo a sus posibilidades, y si el
dinero era escaso para tenerlo con ese lujo, no era menor la calidad
de los trabajos en soga que lucía.
El Fausto de don Estanislao del Campo comienza con unos versos de
admiración al overo rosado de un paisano de Bragado, don Laguna,
hombre de a caballo, que parecía pegado en el animal por la apostura
con que cabalgaba. Agrega de inmediato: “Como era escarciador, /
vivaracho y coscojero, / le iba sonando al overo / la plata que era un
primor / pues eran de plata el fiador / pretal, espuelas, virolas / y en
las cabezadas solas / traía el hombre un Potosí: / ¡Qué!... si traía para
mí, / hasta de plata las bolas!”.
Sin duda era tan importante el emprendado de Laguna, que suponía
que si llevaba una moneda potosina, hasta las boleadoras eran de plata.
Esos lujos del pasado que una mirada cuidadosa nos revela en nuestra
iconografía se han conservado hasta el presente, revitalizando la
tradición nacional. Patriarca de ella fue, desde la década del 30, don
Santiago Rocca, que alentó la creación de centros tradicionalistas
para conservar las viejas costumbres de nuestros hombres de campo.
No menor fue el interés que puso don Enrique Udaondo, insigne
fundador del Museo de Luján, en rescatar nuestro pasado con desfiles
de paisanos y carruajes que atesora la institución, iniciativa olvidada
muchos años y que actualmente se realiza en el mes de noviembre.
Finalmente, figura de relieve en los últimos años fue el comodoro
Juan José Güiraldes, sobrino de don Ricardo, el autor de Don Segundo
Sombra.
Una de las fiestas más típicas es la jineteada mal llamada doma, cosa
que pasamos a aclarar al lector. Domar es hacer manso de rienda a
un yeguarizo chúcaro, digamos salvaje, que nunca fue agarrado por
el hombre. Fue común hacer jineteadas y domadas desde comienzos
del siglo pasado. El presidente Roque Sáenz Peña presidió una fiesta
criolla a poco de asumir la Presidencia en 1910, reunión de la que se
conserva una de las más viejas películas.
Las jineteadas nacidas al calor de los centros gauchescos y
tradicionalistas (no hay fin de semana que no haya alguna en
distintos lugares del país, incluso hay un programa de televisión que
las transmite) son demostraciones de la habilidad de los jinetes para
mantenerse en un reservado por un período de tiempo.
Con respecto a la palabra “reservado” sirve para denominar al caballo
de malas condiciones para que saliera manso. En las viejas estancias, el
domador se lo informaba al patrón y solían “reservarlo” para probar la
habilidad de los forasteros que se arrimaban a las yerras.
Otra fiesta que suele realizarse especialmente en las fechas patrias es
la mal llamada carrera de sortijas, porque gana quien toma la sortija
del arco, y no quien lo hace en menos tiempo, por lo que es correcto
llamarlas corridas de sortija. Así lo escribió en su diario don Juan
Manuel de Rosas cuando hizo su expedición al desierto, el 26 de
mayo: “Por la tarde se corrió sortija y gallo ciego con premios”.
Los corredores se colocan a unos 50 metros del arco y se lanzan con
sus caballos al galope, para ensartar con el puntero que llevan en la
mano la sortija de un tamaño no mayor que la de una dama.
Unos versos recuerdan estas reuniones en un día patrio: “El sol ha
elevado un rayo / imponente y silencioso / y despierta luminoso / el
25 de Mayo. / Marcelo Acuña en su bayo / un flete que es un primor,
/ luce prendas de valor, / cuidadas y muy prolijas, / para florearse
en las sortijas / donde habrá de lo mejor”. El 25 de mayo de 2006,
he fantastic countryside scenes depicted by Prilidiano Pueyrrredon
showcase the characters typical of the Buenos Aires suburbs around
1850-1870. In his works one can appreciate how the gauchos showed off
their horses in wonderful gear. The gauchos took pride in their horses´ looks,
so if money was scarce and luxury was not possible, they would make do with
fantastic rope work.
“Fausto” written by don Estanislao del Campo begins with some verses
of admiration for one horse owned by a gaucho from Bragado, named Don
Laguna, who was such a good horseman that he seemed attached to his
mount.: “As he was a lively mount/the silver in his tack went tinkling/all
made f solid silver/martingale and stirrups/ a silver Potosi coin in his head-
collar/I think even his hunting bolas were pure silver too.”
Laguna’s horse gear was so imposing boasting a coin from Potosí, that everyone
believed even his hunting bolas were silver. Our lavish past, reminded of in
our iconography, has been carefully kept till today, therefore revitalizing our
national tradition. Don Santiago Rocca encouraged the creation of tradition
centers to keep the old customs of our countryman. Enrique Udaondo, the
founder of the Lujan Museum, also took an interest and brought back to life
the gauchos’ parades and their carriages, which fell into disuse and which are
nowadays held in November.
A figure that is widely known was Commodore Juan Jose Güiraldes, nephew
of don Ricardo, author of “Don Segundo Sombra”.
One of the most traditional celebrations is the breaking-in, wrongly referred to
as “doma”, but here we should offer the reader some explanation. The “doma”
is for making a wild horse tame, to be handled from the reins, and it applies
only to one that has never been ridden. The breaking-in as a performance
started at the turn of the last century. As soon as President Roque Saenz Peña
took office, he hosted a criollo festivity in 1910 documented in film.
The breaking-in was born in traditional gaucho centers (every weekend they
take place in different parts of the country, and you can watch them on a TV
program) and it was a skill performance of the ability of the rider to stay on
the horse (reservado) for a length of time.
The word reservado refers to the horse that needs to be tamed. At the old
estancias, the breaker would inform the owner and they reserved that particular
horse to test the ability of the horsemen who arrived at the place during the
branding time.
Another performance that takes place during national festivities is the ring
race (sortija), won by those who get the ring in the proper way and not by
the fastest one. So it was reported in his diary by don Juan Manuel de Rosas
when he went on an expedition to the desert on May 26th: “In the afternoon
there were ring races and other games with prizes”.
Those who take part in the race stand fifty meters from the goal post and run
flat out on horseback trying to put through a ring, no bigger that a lady´s ring,

sortijas en una fiesta.
Si la fiesta se hacía en honor de alguien, era común entregar la sortija
a la dama que acompañaba al homenajeado. Cuando visitó el país
la infanta Elena de Borbón, se hizo una fiesta donde se corrieron
sortijas en la estancia Santa María del comodoro Güiraldes en San
Antonio de Areco. En esa oportunidad, los corredores entregaron
las sortijas a la agasajada, que conocía sin duda estas fiestas que se
celebran en España, de donde pasaron a América.
Otras reuniones muy populares fueron las carreras cuadreras, llamadas
así por fijarse la distancia en cuadras, generalmente en línea recta.
Un dibujo del pintor Emeric Essex Vidal de 1819 ilustra una de
estas carreras en Buenos Aires, las que se corrían sobre el camino
que iba al norte de la ciudad. Allí se observa a los corredores y a
un pequeño grupo de concurrentes que llevan largos facones que
pueden usar ante cualquier provocación según el autor. También se
ve a un fraile, ya que al parecer los religiosos eran aficionados a este
tipo de reuniones.
No dudamos del aserto del inglés ya que con frecuencia las carreras
cuadreras fueron motivo de serias disputas, por lo que el gobierno
muchas veces las prohibió. Recuerdo de chico una de esas cosas
que no se deben escuchar: decían que un hombre muy afectuoso
conmigo, de ascendencia vasca pero muy acriollado, tenía una muerte
en una cuadrera. Más tarde lo confirmé y era verdad.
Don Ricardo Güiraldes, tan mencionado hoy en estas páginas, en el
capítulo XX de su obra cumbre describe muy bien los personajes de
una tarde de cuadreras, donde uno de los protagonistas pierde todo su
dinero; recomiendo mucho leer esas páginas.
Cualquiera que hoy se acerque a una reunión de este tipo podrá ver
el lujo del paisano en su vestimenta y en la de sus caballos; y disfrutará
un momento de auténtica tradición.

Some verses picture one of these national festivities: “A sun beam/ imposing
and silent/rising in all luminosity/on May 25/Marcelo Acuña on his pale
horse/such a wonderful mount/sporting valuable gear/neat and all in place/
to show off at the ring race/where the best shall be seen”. On May 25, 2006
in the city of Buenos Aires, they held a ring race event in the area of Caballito.
If the celebration was in honor of someone, it was usual to offer the ring to
his lady. When princess Elena of Bourbon visited our country she attended
a great ring race celebration at estancia Santa Maria, owned by Commodore
Güiraldes in San Antonio de Areco, where she was offered the ring by the
competitors. The princess was aware that those games were practiced in Spain,
from where they came to America.
Other popular festivities were the country races (cuadreras) which received that
name as they were raced along a block (cuadra) generally in a straight line.
A painting by Emric Essex Vidal from 1819 illustrates one of those races in
Buenos Aires, being staged on the road going north of the city. The picture
shows some racers and a small group of people carrying large knives (facones)
that could be used at any time they felt they were challenged. You can also see
a priest; apparently they were very fond of these kinds of gatherings.
Many times the cuadreras involved serious disputes, a reason why the
government banned them. As a child I remember having heard something I
was not supposed to hear, about a Basque man who was very kind to me; he
was very fond of anything criollo, and it seemed he had killed someone at a
cuadrera. Later on I could confirm that this was true.
Don Ricardo Güiraldes, whom I have mentioned so many times, describes in
chapter 20 of his major novel, all the characters present at the cuadreras on
one afternoon, where one of them looses all his money. I recommend reading
this part.
Anyone going to the cuadreras today will be able to admire the lavish gaucho’s
clothing and the fine horse’s gear. It would make a perfect occasion to enjoy
genuine tradition.

residencia china sofisticada y moderna, a partir del respeto por
los cánones tradicionales de la geometría y la arquitectura chinas,

un patio donde se desarrolla la vida cotidiana.
Chi concibió un santuario tranquilo dentro de un ambiente espiritual

The interiors of Park Hyatt Shanghai have been created by the award-winning
New York-based designer Tony Chi of Tony Chi and Associates. His vision
was to create a sophisticated modern-Chinese residence, designed with respect to
traditional Chinese geometry and architecture, while providing all the comforts of
a stately home. Guests will therefore travel through a sequence of ‘gates, halls and
chambers’, culminating in a courtyard where daily life congregates. Chi envisages

design, with a predominance of earth tones and natural materials.
As soon as guests approach along the bamboo-lined driveway, the city’s hustle

through a series of hushed galleries displaying contemporary Chinese art,
leading through to elevator ‘cabins’, which whisk them up a giddy 87 floors to

for coffee breaks and cocktails. Outside, a Gathering Hall, filled with striking,
stone serving plinths. Also on this floor, an Events Studio assists guests and

Below that, on the 85th floor, guests will encounter Water’s Edge, a relaxation
zone featuring an overflowing 20-metre infinity pool, a Wellness Studio with
two treatment rooms; and a gym. There is also a tai-chi ‘courtyard’, where a
master will lead tai-chi sessions every morning. There, guests will be able to
meet the hotel’s charismatic General Manager, Christophe Sadones, who will
occasionally take part in the martial art sessions.
While the hotel’s lower floors will be an oasis of tranquillity, the upper floors,
opening at the end of the year, are being designed to reverberate with energy
and excitement. Spanning floors 91 through 93, 100 Century Avenue is the
world’s highest bar, restaurant and private dining room, and is primed to be
the ultimate wining and dining destination in Shanghai. On the 91st floor,
a 300-seater super-restaurant features in the sprawling space with 25-metre
floor-to-ceiling windows. Serving Western, Chinese and Japanese cuisines, the
multiple show kitchens will include a charcuterie; a western kitchen with four
dramatic charcoal grill ovens; a Chinese kitchen featuring a duck-roasting oven;
a sushi bar; a pastry counter; and a wine cellar.
The 92nd floor is split into two bars – on the west side, a Western bar featuring
live jazz music and professional barmen whipping up creative cocktails, and on
the east side, a cosy Oriental-style bar with a traditional Shanghainese singer

la laca y disponen de camas de día para la realización de masajes dentro
de la habitación, una recámara-vestidor con espejos, reproductor de
DVD, Internet banda ancha y máquina de café. Los amplísimos baños
de paredes de piedra poseen una TV plasma empotrada en el mueble
de tocador, lavatorios dobles de mármol, un área de baño oriental
con una ducha llamada “monzón”, una bañera para sumergirse, un

Daniel Kaplan:Intimidades del tangoDaniel Kaplan: The intimacy of tango
acido en Buenos Aires en 1965, Daniel Kaplan es un porteño
de ley que desde la infancia sintió inclinación hacia las artes
plásticas. A los 14 años comenzó a estudiar grabado con el maestro
Alfredo De Vicenio y en 1987 egresó de la Escuela de Bellas Artes
Prilidiano Pueyrredón. También se formó en la Escuela Superior de
Bellas Artes Ernesto de la Cárcova y estudió con Guillermo Roux
y Juan Carlos Distéfano. Más tarde, merced a la Beca Fullbright que
le otorgó el Fondo Nacional de las Artes, se radicó por un año en
Nueva York (1996).
Viajó a República Dominicana donde fue profesor y artista residente
en Altos de Chavón, la Escuela de Diseño de ese país. Conoció
el pueblo, su gente y sus raíces, y pintó una serie que llamó “los
tingueritos”, según la denominación de los niños campesinos de la
zona. La expuso entre 1996 y 1998 con marcado suceso en distintas

He had tutors like Guillermo Roux and Juan Carlos Distefano. Later on
he obtained a Fulbright scholarship granted by the National Arts Fund and
settled in New York for one year (1996).
He traveled to the Dominican Republic where he was a professor and resident
artist at Altos de Chavon, the country’s school of design.
He got to know the town, its people and its roots and he painted a series that
he called “los tingueritos”, as the rural children of the area are known. He
exhibited his work from 1996 to 1998 with amazing success in different

“Creo que la pintura es, hoy, una manifestación del arte absolutamente
vigente y hasta necesaria. Es una metáfora de algo que no podemos explicar
con palabras. Invención pura. Cuando se corporiza, se convierte en una puerta
que al abrirla permite al contemplador entrar al mundo del artista.
Entiendo que es posible establecer una analogía entre el acto de pintar y lo
más esencial del tango: música e imágenes comparten los mismos elementos
como ritmos, medidas, formas, estilos; al igual que la pintura, el tango es un
medio de autoafirmación. Como bailarín y pintor disfruto del derecho a
improvisar y de elegir qué hacer en cada paso.
El tango germina en el sur, en el suburbio, y nos habla de transitar, perdernos,
volver a casa. Nos habla de las sombras, del espejo, del amor. Es también una
metáfora que permite compartir la intimidad, escuchar y hacer oír nuestra
propia voz.
En esta nueva muestra he querido ir más a la intimidad del submundo
tanguero. En las exposiciones anteriores (‘Noche de Milonga’, ‘Panorama
Tango’ y ‘Tango Refections’) el énfasis estuvo en la dinámica del baile, la
atmósfera y la articulación del espacio y el tono del cuadro. Esta vez también
he querido mostrar la sensualidad, seducción y ternura que se deparan los
protagonistas detrás de la escena”.
KAPLAN DIXIT
“I believe painting is today the manifestation of an art that’s absolutely alive and
that’s even necessary. It’s a metaphor of something that we cannot put into words. A
mere invention. When it becomes tangible, it’s like a door that you open, allowing
you to admire the artist’s world.
I believe that it is possible to compare the act of painting to the essence of tango as
music and images share the same elements like rhythm, measure, forms, style. Just
like painting, tango is a self assuring means. As a dancer and a painter I enjoy the
right to improvise and to choose what to do each step of the way.
Tango has its roots in the South, in the suburbs, and it tells us about walking by,
losing our way, coming back home. It tells us about shadows, mirrors and love. It’s
a metaphor that allows sharing intimacy, to listen and to have your own voice
listened.
In this new exhibition I wanted to go further into the intimacy of the tango sub-
world. In previous shows the stress was in the dynamics of the dance, its atmosphere,
and the articulation of space and the tone of the scene. This time I wanted to
express the sensuality, seductiveness and tenderness that the characters share behind
the scene”.

En 1997 participó en la muestra “Tango” llevada a cabo en el Palais
de Glace, en Buenos Aires. Las obras enviadas por Kaplan causaron
sensación. Su trabajo fue admirado y reconocido en cada una de las
exposiciones que se realizaron durante la gira por las distintas ciudades
de los Estados Unidos. Desde entonces Kaplan ha viajado por el
mundo, pero siempre que puede regresa a la Argentina y, a través de su
pintura, explora el tango. Bailarín aficionado y virtuoso, entusiasta de
Pugliese, De Caro, Mores y Piazzolla, este talentoso artista frecuenta los
templos tangueros porteños que luego recrea en sus obras.
Su búsqueda más reciente abre una ventana a la intimidad del
“backstage” de ese mundo. La sensualidad, seducción, ternura
y fantasías que imprime la música ciudadana a sus actores son
maravillosamente captadas por Kaplan en sus obras.
Se dice que el tango es un sentimiento que se baila, es también
literatura, y música. Para Kaplan, cuya existencia está íntimamente
unida a la pintura es, parafraseando a Marechal, una posibilidad
infinita.

where Kaplan’s works caused quite a stir. His creations were admired and
acknowledged in each of the shows during his tours of different
cities of USA.
Since then, Kaplan has traveled the world, but he always returns to Argentina
and through his painting he explores the world of tango. An amateur dancer
and a virtuoso, a fan of Pugliese, De Caro, Mores and Piazzolla, this talented
artist is a regular at porteño tango venues that he later on recreates in his
works.
His latest search opens a window onto the backstage intimacy of that world.
Sensuality, seductiveness, tenderness and the fantasies that the music of Buenos
Aires transmits to the actors are wonderfully captured by Kaplan in his art.
It’s been said that tango is a feeling you dance; it is also literature and music.
For Kaplan, whose existence is closely related to painting, it is -in Marechal´s
words- an infinite possibility.

paloca es un clásico del barrio porteño de la Recoleta, un
oasis donde Estela y Vicky La Fuente asesoran a sus clientas,
estudian el estilo de cada mujer y le proponen ideas que la realcen al

-Estela, ¿cómo nació Opaloca?
-Surgió hace 36 años como una boutique de atuendos informales.
Luego nos dedicamos a la ropa más arreglada y las clientas nos fueron
llevando hacia la vestimenta de cóctel, de novias y madrinas.
-Su hija, ¿es también su socia?
-Sí, tuve la suerte de que a Vicky le gustase el diseño. Estudió en
Buenos Aires y luego realizó posgrados en Europa, entre ellos, en
el Saint Martins College of Art and Desing de Londres, donde se
recibieron Stella McCartney, Alexander McQueen y John Galliano,
por citar algunos.
-Tienen clientas de todas las edades, ¿reciben clientas del
exterior?
-Sí, tanto del interior del país como del exterior, muchas turistas
compran nuestros diseños.
-¿Pueden en tan poco tiempo llevarse un vestido hecho a
medida?
-Así es, se toman las medidas y lo pueden tener terminado en menos
de una semana. Muchas veces, encuentran en nuestra boutique algo
que les encanta y se lo adaptamos. Todo se hace en nuestro propio

Estela, how did Opaloca get started?
It all started 36 years ago as a boutique that created casual outfits. We
then went on to do more formal dresses and our customers led us towards
making cocktail dresses, as well as bridal gowns.
And your daughter is also your partner?
Yes, I was lucky that Vicky also was keen on design. She studied in
Buenos Aires and then she did post-graduate courses in Europe, namely
at Saint Martins College of Art and Design in London, where Stella
McCartney, Alexander McQueen and John Galliano graduated, to name
a few.
You cater to all ages; do you have customers from overseas?
Yes, both from the interior and from abroad; many tourists buy our designs.
Is it possible for them to get a dress made-to-measure on such
short notice?
Absolutely, their measures are taken and they can get a garment in less
than a week. They often find at our shop an item that they will like and
we adapt it to them. Everything is made in our own workshop, in our
shop, and my daughter and I are always present for the trials, or our very
trusted, María José Sáenz.

-¿Asesoran a las clientas?
-Estudiamos el estilo de cada mujer y la ayudamos a encontrar lo que
mejor le queda, tanto en lo referente al diseño como a los colores.
-¿Manejan alguna paleta de colores en especial?
-En primavera y verano me encantan los colores vivos como el coral,
el verde esmeralda y los azules. Me gusta también el nude, tan de
moda esta temporada, color que no les queda bien a las morochas
pero sí a las rubias. Desde hace unos años, la moda es menos rígida;
se toman detalles de lo que está en auge, pero siempre teniendo en
cuenta lo que más favorece a la clienta.
-¿Todos los diseños son exclusivos? ¿Cuál es la especialidad
de Opaloca?
-Los drapeados, los bordados artesanales y la corsetería interna, que
es el gran secreto para realzar la figura.
-¿Cuáles son sus géneros preferidos?
-Los que más usamos son sedas naturales, encajes y gasas de seda
natural. Importamos los encajes de París y las gasas y los chiffones
de la zona del Lago di Como, en Milán. Lamentablemente, no hay
géneros de alta calidad para vestidos de fiesta en la Argentina.
Estela es naturista, y lo trasmite en sus diseños y los materiales nobles
que utiliza. La ropa tiene calidez y armonía. Se maneja de la misma
manera con la gente que la rodea. Y en la boutique se percibe esa
armonía que sus clientas tanto agradecen.

Do you give your customers advice?
We consider each woman’s style and we help her find what better suits her,
both with regards to design and the choice of color.
Do you use any particular color palette?
In spring and summer I love to go for bright colors like coral pink, emerald
green and the range of blues. I also like nude, so much in fashion this
season, a color that won’t suit brunettes but which will favour blonds. For
a few years now, fashion has been less stiff. We take a few traits that are
in vogue, but we mainly use what suits our customer.
Are all your designs exclusive? What is Opaloca´s speciality?
Draped dresses, crafted embroidery and bodices, which are the great secret
to enhance the figure.
Which are your favourite fabrics?
What we use most is silk, lace and silk gauze. We import lace from Paris
and gauze and chiffon from the region of Lake Di Como, in Milan.
Unfortunately there are no high quality fabrics for etiquette dresses in
Argentina.
Estela is a nature lover and that can be appreciated in her designs and
in the noble materials she uses. Her clothes have warmth and harmony,
qualities she boasts when she connects with the people around her. At
the boutique you can perceive that harmony that her clients appreciate
so much.

define Francisco Bedeschi en su libro Fly Fishing The Best Rivers of
Patagonia:
- Río Pichileufú: 4 km de río dentro de la estancia, fácil de vadear,
siempre con buen clima, donde expertos y principiantes disfrutarán
de una pesca inolvidable.
- Río Limay: de clase mundial, famoso por sus “marrones plateadas”,
a sólo una hora de la estancia.
- Excursiones a los Ríos Traful, Malleo, Correntoso y Filo Hua Hum,
divertidos y desafiantes para el “fanático” de la pesca con mosca.
Gastronomía
Desayuno y merienda
Té, café, yogurt, frutas de estación, jugos naturales de naranja y
pomelo, licuados, fiambres, huevos revueltos o con panceta, scones,
tres tipos de pan horneados a primera hora todos los días y muffins.
Para el té de la tarde, se suman tortas y tartas con frutas de estación.
Almuerzo y cena
De entrada, ensaladas con productos de la huerta (rúcula, lechugas,
espinaca baby, escarola, tomates cherry y tomates secos), queso brie,
hongos confitados y trucha ahumada. O bien, empanadas de carne
y de trucha. Por la noche, se sirve sopa crema o crépe de verduras.
De plato principal, entre otras opciones, puede saborearse al aire libre
(si el clima lo permite) un cordero con crocante de hierbas aromáticas,
con salsa agridulce a base de aceto, miel y soja, acompañado de
milhojas de verduras, puré de puerros, espinacas a la cremas o papas
rústicas. También puede probarse:
- Trucha con manteca de salvia y juliana de puerros y zanahorias, en
cazuela, con hongos de pino, crema y jengibre. O pollo en pichos con
panceta, duraznos y verduras, con milhojas de papa, en cazuela, con
variedades de hongos y papines a la crema.
- Lomo con papas, cebollas y batatas al horno, a las tres pimentas, con
mousse de morrones rojos y crocante de papas.
- Pastas caseras: raviolones de espinaca, parmesano y almendras, con
distintas salsas; cintas con juliana de verduras, jengibre y soja salteadas
al wok; sorrentinos de trucha y hongos, con distintas salsas.
De postres, puede ser: mousse de tres chocolates, ensalada de frutas,
marquise de chocolate sobre salsa tibia de frambuesas, flan casero,
copa helada de frambuesas y frutillas, duraznos tibios con especias.
Todos los platos son de elaboración casera, con productos del campo,
de manera que pueden variar de acuerdo a la producción de la
estancia. Siempre, antes del almuerzo y la cena, se sirve un bandejeo
de tapas muy variadas.
Fly Fishing

Breakfast and snacks
Tea, coffee, yoghurt, seasonal fruits, freshly squeezed orange and grapefruit
juice, smoothies, cold cuts, scrambled eggs with bacon, scones, three types of
bread baked first thing every day and muffins.
For afternoon tea, cakes and tarts made with season fruits are available.
Lunch and dinner
As entrées, salads prepared with produce from the garden (arrugula, lettuces,
baby spinach, endives, cherry tomatoes and dry tomatoes), Brie cheese,
mushrooms comfit and smoked trout. Also beef or trout empanadas. At night
a cream soup or vegetable crêpes are served.
As main course, among other options, you can savor outside (weather
permitting) a lamb with crunchy of aromatic herbs, with sweet and sour
sauce made from balsamic vinegar, honey and soy sauce, garnished with
vegetable mille-feuille, leak purée, cream spinach or rustic potatoes. You can
also relish:
- Trout in sage butter and julienne of leeks and carrots, in a casserole with
mushroom pines, cream and ginger. Or chicken in skewers with bacon,
peaches and vegetables, potato mille-feuille, in casserole with a variety of
mushrooms and creamed new-potatoes.
- Three-pepper sirloin with potatoes, onions and roasted sweet-potatoes,
with a mousse of red peppers and crunchy of potatoes.
- Homemade pasta: big spinach ravioli, parmesan and almonds, garnished
with different sauces; fettuccine with vegetable julienne, ginger and soy sauce
sautéed in a wok; trout and mushroom Sorrentinos with different sauces.
Dessert options: Three-chocolate mousse, fruit salad, chocolate marquise
over warm sauce of raspberries, homemade cream-caramel, frozen glass of
raspberries and strawberries, warm peaches in spices.
All dishes are homemade, with country products, so they might vary
accordaning to the production at the estate. Before lunch and dinner a wide
range of tapas are served.

ENTREVISTA A JOSé ZUCCARDI, EXITOSO HOMBRE DE LA INDUSTRIA DEL VINO, AL FRENTE DE FAMILIA
ZUCCARDI, UNA BODEGA DE PRIMERA LíNEA EN LA ARGENTINA, AMPLIAMENTE RECONOCIDA EN
EL EXTERIOR. APASIONADO, INNOVADOR, NOS CUENTA SUS METAS Y SU FORMA DE ENCARAR LA
VITIVINICULTURA CON UN SESGO BIEN ARGENTINO.
Afortunadamente, uno nunca tiene metas definitivas en esta
actividad. Y digo afortunadamente, porque para quienes
consideramos al vino como una forma de vida siempre hay desafíos.
Mi padre dice que la uva siempre tiene algo nuevo para dar, y eso
es absolutamente fascinante y motivador”. El que habla es José
Zuccardi. “En estos momentos –agrega– estamos llevando a cabo
trabajos muy intensos en materia de investigación y desarrollo,
liderados por mi hijo Sebastián. Creo que en un futuro cercano
tendremos avances significativos en materia de variedades y de estilos
de vinos. También esperamos concretar para el 2012 la construcción
de la bodega Zuccardi en el Valle de Uco, exclusivamente destinada a
la elaboración de vinos de alta gama”.
-¿Qué es el vino para los Zuccardi?
-Es una forma de vivir. Hace algunos años, en una entrevista, me
preguntaron por qué nunca vendimos la bodega y mi respuesta fue
que nunca pensé en hacerlo, porque soy un hombre del vino. Creo
que ese espíritu es el que nos motiva día tras día. Para nosotros, el
vino es trabajo y placer al mismo tiempo.
-¿Hay una receta básica para hacer vinos de calidad, sea
la región que sea, salvando las distancias de lo que aporta
cada terroir?
-El terroir es absolutamente determinante. Cuando hablamos de
terroir, por supuesto, nos referimos a las condiciones de clima y
suelo, pero también a las personas. El vino se expresa en clima, suelo
y variedad, pero también en quiénes lo elaboran. El cuidado de los
detalles desde el viñedo en adelante es totalmente determinante en
la calidad final del vino.
-Se suele dar entre los enólogos más jóvenes el entender
la vitivinicultura como tecnología o bien, una suerte de
controversia entre enología de precisión versus pasión.
¿Cuál es el punto de vista de una bodega como Familia
Zuccardi?
-Creo que esa controversia no tiene sentido. De nada sirve la
tecnología, por más avanzada que sea, si no se tiene pasión por
lo que se hace. El vino no es una bebida industrial, por lo que
entiendo que esa dicotomía no debiera darse. Hoy, la tecnología
debe ser vista como una herramienta muy útil que, aplicada
convenientemente, puede exaltar las cualidades que ya vienen desde
el viñedo. La calidad viene desde la planta y, en ese sentido, es muy
importante contar con gente apasionada, con amor por su trabajo.
Como decimos siempre: para hacer vinos de calidad es fundamental
contar con gente de calidad.
Fortunately, in this business you never have a last goal. And I say
fortunately because for those of us who consider winemaking as a way
of life, there are always challenges to face. My father says that the grape
has always something new to give, and that is fascinating and absolutely
motivating”. José Zuccardi is speaking, and he adds: “At present we are
working hard on research and development, under the guidance of my
son Sebastián. I believe that in the near future we will have significant
breakthroughs in winemaking, regarding varieties and style. We also
expect to conclude in 2012 the construction of Zuccardi winery in Valle
de Uco, destined exclusively to making high-end wines,”
What is the meaning of winemaking for the Zuccardi family?
It’s a way of life. A few years ago, in an interview, they asked me why we
never sold the winery and I said I never thought of selling it, because I’m
a wine-man. I believe that is the spirit that drives us day by day. For us,
wine is work and pleasure at the same time.
Apart from what each terroir can contribute, is there a basic recipe
to make quality wines?
The terroir is absolutely a determining fact. When we speak about
terroir, we mean the climate and soil conditions, but we also refer to the
individuals. Wine is expressed by the climate, the soil and the variety, but
also by those who make it. Taking care of every detail in the vineyard, and
everything else that follows, is essential to the end result.
Some young enologists understand viticulture as a technology or
sometimes as a controversy between precision enology as opposed
to passion. What is the point of view of a winery like Familia
Zuccardi?
I believe that controversy is nonsense. Technology is not useful, no matter
how advanced it might be, if you don’t feel passion for what you do. Wine
is not an industrial beverage, so I think that dichotomy shouldn’t be so.
Technology should be considered as a very useful tool, which if applied
correctly, can make the most of the qualities already rooted in the vineyard.
Quality is in the vine and in that respect it’s very important to count with
passionate people, who love their work. As we put it: to make quality
wines it’s paramount to have quality people.
At international levels we are inside the wine circuit, do they
recognize us as producers of excellent wines or do we still have to
wait to be perceived in that way?
Argentina is acknowledged as a producer of high value and this is the
fastest growing category on the international market. Even though we still
have a long way to go, we have already achieved a great deal. In that sense,
the role played by Malbec as signature grape is very important. This is vital

-¿Estamos dentro del circuito del vino en el plano
internacional, nos reconocen como productores de
excelentes vinos o aún falta para llegar a ser percibidos
como tales?
-Hoy la Argentina es reconocida como un productor de alto valor
y es la categoría que más crece en el mercado internacional. Si bien
aún nos falta mucho camino por recorrer, lo que hemos alcanzado
hasta aquí es muy meritorio. En ese sentido, es muy importante el
papel que juega el Malbec como cepa insignia. Esto es vital para un
país como la Argentina, que tiene gran tradición de consumo, pero
que es un jugador nuevo dentro del mercado internacional. La clave
que nos está permitiendo ser cada vez más tenidos en cuenta por los
consumidores del exterior es la excelente relación calidad-precio de
los vinos argentinos en general, y de los Malbec en particular. Estos
se destacan por ser tintos sedosos y agradables, pero a su vez con
carácter, que pueden disfrutarse incluso en sus exponentes de nivel
de entrada. Su extraordinaria relación calidad-precio y lo agradables
que son desde lo sensorial les permitieron penetrar en un segmento
de mercado muy interesante. Además, se ha generado la imagen del
Malbec como ícono cultural del país.
for a country like Argentina, who has a tradition of consuming wine, but
who is a new player on the international arena. The key fact that allows
us to be acknowledged by consumers overseas is the excellent ratio quality-
price of Argentine wines in general, and Malbec in particular, which is
a silky and pleasant type of red, but with character. The extraordinary
quality-price relationship and the pleasant feeling when you taste this
grape, managed to place us in a very interesting segment of the market.
And the image of Malbec has become the cultural icon of our country.
What is that process like?
Wine is a drink that expresses the culture of the country producing it,
which is not the case with industrial beverages. In that respect, Argentina
has the upper hand compared to other producers of the New World, as we
have a variety of cultural expressions which are very strong, that give us
an identity in the outside world, like meat, tango and football. Wine and
Malbec in particular, are becoming cultural icons.
Is that evident in wine-fairs held abroad?
Yes. The people that approach a winery’s stand usually want to taste its
best wine. At the Argentine stand they will go for Malbec. This variety has

nos identifican fronteras hacia afuera, como la carne, el tango y el
fútbol. El vino, y en particular el Malbec, se están instalando entre
esos íconos culturales.
-¿Eso puede verificarse en las ferias de vinos que se llevan
a cabo en el exterior?
Así es. Normalmente, las personas que se acercan al stand de una
bodega suelen pedir para probar el mejor vino de la misma. Cuando
concurren al espacio de una bodega argentina, directamente
piden Malbec. El grado de identificación que se ha logrado con
esta variedad es muy fuerte. Hoy estamos compitiendo en todos
los segmentos de precios. Si nos comparamos con Chile, por
ejemplo, podemos ver que el precio promedio de nuestros vinos

diferencial que puede aportarnos muchas satisfacciones, que es
la diversidad que podemos presentar en materia de variedades
vitivinícolas de alta calidad, como Bonarda, Tempranillo, Syrah y
Torrontés, entre otras. Esto nos permitirá aumentar nuestra oferta,
no solo en materia de varietales, sino también en la elaboración de
excelentes blends.
-Nuestro Malbec es especial y nos está abriendo puertas en
el exterior, pero ¿hemos logrado en los vinos argentinos
en general una “personalidad”, un “estilo bien argentino”
claramente reconocible?
-Definitivamente, hay un estilo argentino. El 74% del vino que se
elabora en la Argentina se consume dentro de nuestras fronteras.
No necesitamos hacer vinos con un estilo de exportación. La
importancia que tiene el mercado doméstico nos obliga a elaborar
vinos con acento argentino, buscando lo que el consumidor de
nuestro país quiere. Ese es un diferencial muy importante, porque el
consumidor que viaja por el mundo no va a encontrar diferencias
en un mismo vino si lo toma en la Argentina, los Estados Unidos
o Europa.
-Familia Zuccardi es sinónimo de creatividad, cepajes nuevos,
de innovación, de apertura. ¿Qué tiene proyectado para el
2011?
-Tenemos muchos proyectos y este fin de año nos encuentra
abocados, como mencioné antes, a tareas de investigación y
desarrollo. En estos momentos, estamos presentando un nuevo
Bonarda bajo la marca Emma, elaborado en honor a mi madre,
Emma Zuccardi. Es un vino de alta gama, de partida muy limitada,
no más de 5000 botellas, elaborado con las uvas de un viñedo que
yo mismo planté en 1979. Demuestra todo el enorme potencial
que la variedad Bonarda tiene, para nuestra bodega en particular y
para la Argentina en general. Para el 2011, seguramente, tendremos
novedades en materia de vinos fortificados y en nuestro segmento
Zuccardi Textual.

If we compare ourselves with Chile, for instance, the average price for our
wines is higher than that of Chilean wines on the main international
markets. Apart from the success of Malbec we can add many other top
quality varietals like Bonarda, Tempranillo, Syrah and Torrontés, among
others. Thus, we will be able to increase our offer of varietals and also of
top blends.
Our Malbec is special and it is opening doors in other
countries, but have we achieved a wine with personality, a
true Argentine style that is easily recognizable?
There’s definitely an Argentine style. 74% of the wine produced in
Argentina is consumed within our borders. We don’t need to make a
wine with an export style. The importance of our domestic market makes
us create wines with an Argentine accent, paying attention to what the
consumer in our country demands. That is a very distinctive aspect, because
the consumer that travels the world won’t find any differences when they
drink the same type of wine in Argentina, USA or Europe.
Familia Zuccardi is a byword for creativity, new grapes,
innovation, a broad mind. What have you got in store for 2011?
We have many projects and this year’s end will find us focused on
research and development, like I mentioned. We are now presenting a new
Bonarda under the brand Emma, created to pay tribute to my mother,
Emma Zuccardi. It’s a high-end wine, a very limited batch, not more
than 5000 bottles, made with grapes from a vineyard I myself planted in
1979. It shows off all the potential that the Bonarda has for our winery
in particular and for Argentina in a broader sense. For 2011 we will
probably have news as to fortified wines and in our segment Zuccardi
Textual.
