Levan is a homopolysaccharide, composed of D-Fructofuranosyl residues joined by β2,6 with multiple branches by β2,1 linkages, having great potential as a functional biopolymer in foods, feeds, cosmetics, pharmaceutical and chemical industries. It is used as food or a feed additive with prebiotic and hypocholesterolemic effects.
