A llow the li ciuid to' cool and begin to jel l. ThensLi' in the tiny mint leaves, onion,salt, paprika, pepper, olives and lemon juice. Pour into freezing tray butdo not allow to freeze too hard.Whenit is firm an dthoroughly chilled turnthe cubes out onto a bed of crisplettuce leaves and cress.     Cabbage Salad14 cup butteregg, separatedtablespoons sugar14 teaspoon saltV4 teaspoon mustard14 teaspoon paprika12 cup vinegar1 pint shredded cabbageCream butter and beat into it firstLhe yolk and then the white of oneegg. Add the sugar, mustard,salt audpaprika. Then pour on very gradually

    beating constantly, tbe hot vinegar.Cook over hot water until the m.x-ture tliickens a little. It should be likeUilck cream. Let this cool and thenstir in a generous pint of finelychredded cabbage.Molded Chicken Salad

    2 teaspoons gelatin2 cup cold water2 cups cold chicken, diced12 cup celery, dicedcup chopped gi-een pepper1 cup stuffed olives, chopped12 teaspoon saltSoak gelatin in cold water 5 minutes and dissolve over boiling water.A dd remaining ingredients. 'Put intoring mold or individual molds. Chillthoroughly. When set unmold oncrisp lettuce andseiwe -with mayon-;naise or. 1000 Islands dressing.

    Mayonnaise Dressingteaspoon mustardteaspoon saltesg yolks or 1 whole egg.Dash of cayenne peppertablespoons lemon juicetablespoons vinegar112 cups olive or salad oilMi - x dry ingredients, add egg yolks.When well mixed add 12 teaspoonvinegar. Add oil very gradually, dropby''drop at first, stirring constantlywith a fork until mi.xture begins tothicken. Thin with vinegar or lemonjuice and add oil and acid alternatelyuntil all i s used, beating constantlywith a rotary egg beater. Do not addthe oil too ciuickly at first or thedressing will have a curdled appear-ancti.
