家庭背景 我是林軒毅,1991 年 1 月 23 日出生於臺灣高雄,今年二十二歲。我三個月大時,隨

著父母親移民到南非彼得斯堡 (現在叫波羅克瓦尼,林波波省 (Pietersburg now renamed to

Polokwane, Limpopo Province)。

我的家庭成員有四:父親、一個妹妹、一個弟弟和我。她原本是美滿又幸福的“五口之家”,

但當我五年級時,媽媽出了車禍,離開了我們。那時候,我才十歲,妹妹九歲讀三年級,

弟弟是七歲讀一年級。我父親回到台灣去辦事,當他回到南非的時候,母親執意要去機

場迎接他,卻不幸被卡在兩輛大卡車之間,喪失了生命。我家也養了兩隻狗、一隻貓、

一隻鴨和許多雞。

我的父母親在南非經營小超市。媽媽去世之後,我不得不幫忙照顧家庭。因為我知道父

親整天忙進忙出,一邊補貨、顧店,一邊照顧我們,還要花一些時間做家事。我於是幫

著爸爸確認弟弟妹妹們是否穿好了校服,並且為大家準備好早餐。

就學過程

我曾經在我就讀的高中福利社打過工,幫忙製作並且販賣新鮮的食物,例如: 漢堡,

沙拉,三明治,墨西哥手捲,南非熱狗 (Boerewors Roll) …等。我喜歡嘗試新的食物尤其

是從各種國家來的和當我在做菜時我會嘗試配對適合口味在一起。

興趣嗜好

每年的運動會,我總是參加跑步、鉛球和標槍比賽。雖然我長得不夠強壯,也沒能把

鉛球和標槍投擲得很遠,但我很熱愛這方面的運動。我還參加過學校的網球和西洋棋隊。

我也喜歡運動特別是跑步,足球,游泳,網球等。我觀念對於身體健康是蠻看重也喜歡

和朋友相處的時間。

特殊成就 在高中時,我們有上烹餁課。烹飪老師偶而會辦個晚餐活動,給我們機會去實踐我們

所學的技巧,回饋支持我們的家長 。這些都是很好的學習經驗,我們得以更加理解餐廳

的經營。

高中畢業後,我上過普魯利思的廚師學院 (Prue Leith Chefs Academy) 。之後我開時在

這個行業工作。我有在一家五星級旅館工作過, Hunter’s Country Lodge 鄰近 Plettenberg

Bay 沿著 Garden Route 於開普敦 (Cape Town) ,作為一個助理廚師,然後轉移到一個四星

級野生動物營地 (safari camp),在 Kwa Madwala Manyatta Rock Lodge 私人野生動物園 (Priv

ate Game Reserve) 靠近內爾斯普雷特 (Nelspruit) 在姆普馬蘭加省 (Mpumalanga Province),

作為餐廳經理可是經過一段時間之後,我越來越覺得自己所知不足,很希望學習更多的

技巧,創作更多的口味。

空閒時,我喜歡拼圖和學習其他的語言。因為我還不曾學過中文的讀寫,所以決定回到

臺灣讀書。雖然我很想繼續追求對食物的熱愛,但是因為我生長與於一個傳統中國家庭,

父親希望我進到一個熱門科系,於是來到林口國立台灣師範大學僑生先修部,從特輔班

開始最基礎的中文學程,準備攻讀醫科。

入學動機

今年是我在僑先部的第二年,雖然上一年在特別輔導班的學習,我表現得差強人意也

當副班長以及在圖書館有工讀過,今年我是學藝股長,但在先修班三類組要跟來自世界

各地的同學拼排名,就不再那麼輕鬆了! 於是,我想要回到我最有把握的領域。就像在

林口每年一次的國際文化日園遊會上,扮演班級主廚一樣,我希望自己的未來之路很明

確,因為我心越明確越能推出好菜色。

生涯規劃

我現在更堅信自己應該走回餐飲與廚藝這條路,很希望在貴校進修這一門專業。當然,

我還想知道和美食習習相關的文化、習俗等。我的夢想將來要開一家完美結合東方和西

方美食的餐廳,使台灣豐富而多元的文化, 在我的廚藝創作中得到新的詮釋。

Family Background My name is Lin Shuan-Yi, born on January 23rd 1991 in Kaoshiung Hospital Taiwan but at 3 months of age my parents emigrated from Taiwan and immigrated to South Africa- Pietersburg now renamed to Polokwane, Limpopo Province. I am currently 22 years of age. My family and I lead an ordinary but fulfilling and contented life.

There are four people within my family, my father, younger sister, younger brother

and myself included. I am the eldest in my family. My brother is younger than me by 3 years and my sister by 1 year. I was 10 years old at the time my mother got into a car accident, my sister was 9 years and my brother was 7 years. Prior to the accident my father traveled back to Taiwan to handle affairs and when coming back to South Africa my mother insisted on fetching him from the airport, which resulted the fateful incident. We also have 2 dogs, 1 cat, 1 duck and a flock of chicken at our house.

My parents are business people; they opened up a small supermarket in South Africa. When my mother passed away I had no choice but to help look after the family because I knew that my father was going to be very busy, supervising the shop, replenishing stocks, caring for us kids, spending some quality family time etc. I helped out by ensuring that my siblings were dressed and prepped for school everyday and also made breakfast.

Schooling During my high school years I worked in my school’s tuck shop selling freshly made

hamburgers, salad, sandwiches, Mexican tortilla’s, Boerewors rolls (one of South Africa’s speciality). On school sports day I always partook in the running, shot put and javelin events, even though I was never strong enough to project the shot put or javelin far, I participated for the joy of the sport.

I was in my school’s tennis team as well as the chess team. In high school I took hospitality and

tourism as one of my subjects. My hospitality teacher would have restaurant evenings, which we

would cook for parents who came to support us, these were great learning experiences and we got a

better understanding of how a restaurant operates. Whilst in South Africa I never learnt how to read

or write Chinese so I last year I came to Taiwan to do just that.

Hobbies I enjoy sampling new types of food especially those from a different country. I have a penchant for experimenting with different and new flavours or pairing contrasting foods together when I am cooking. I like exercising and taking part in sports particularly running, soccer, swimming, tennis etc. I value living healthy lifestyle and spending time with my friends. In my spare time I enjoy puzzles and learning new languages.

Special Achievement

After high school I went to Prue Leith Chefs Academy. I got a diploma with merit and came out

second in my year. I started to work in the industry and so I’ve worked at a 5-Star Hotel,

Hunter’s Country Lodge near Plettenberg Bay along the Garden Route in Cape Town, as a commis

chef and then moved onto a 4-Star safari camp, at Kwa Madwala Private Game Reserve Manyatta

Rock Lodge next to Nelspruit in the Mpumalanga Province, as a restaurant manager.

Enrollment Motivation

After a while I felt that there was more out there in the world, more skills to learn, more titillating

flavours to discover. I wanted to pursue my love for food but coming from a traditional Asian home,

I felt that my father wanted me enter the popular departments/ fields, and because I didn’t want to

disappoint him I came to Linkou National Taiwan Normal University to become a doctor.

This is my 2nd year, the 1st year I was in the Special Chinese Reinforcement Class (特別輔導班)

to learn how to write and read Chinese, I was also the vice class captain and I was a work-study

student at my school’s library.

This year I am competing against other students for schools. Every time our school hosts an

event known as International Culture Day “國際文化日園遊會” and I helped cater for both of

these for my class and during these times I felt the desire to cook re-emerge within me. I also

catered for an end-of-year class party. Now I truly know what I want and what I want is to attend the

best school in Taiwan and learn all there is to about Taiwanese food, culture and tradition.

Career Planning

I dream of opening up a restaurant where I have perfectly combined eastern and western cuisine into

one as well as make Taiwan along with its food more well known to the world because I believe that

it is still hidden, which is a shame since Taiwan is rich in culture and tradition. I also plan on

traveling the world to unearth concealed marvelous flavours.

讀書計劃

在完成了小學及中學的課程學習後, 接下來所要接受的, 就是大學餐飲與餐旅管

理專門而深入的課程。而我也終於確立了自己的興趣和能力, 決定以餐飲與餐旅

管理學系的領域作為我日後接受大學教育未來從業之方向。而實踐大學院上觀

光休閒與餐旅管理學系能完全滿足我對餐飲的熱情和渴望, 希望我能順利通過個

人申請進入就讀貴校。

(一) 學習規劃:

(1) 選讀實踐大學上餐旅管理學系的原因:

實踐大學院除了歷史較為悠久之外, 其他的客觀條件無論是師資、學風、學術、資源、

設備等方面都非常齊全。而且實踐大學餐飲管理課程特別著重於餐飲廚藝與服務能力、

食品理論與基礎能力、餐飲實務與應用能力、餐飲管理與經營能力以及語文與資訊能

力。

貴校有許多學科和實習例如餐旅管理、實物製備原理、國外語文(日和法文)、會計

學、行銷學、餐飲實習、餐飲服務、營養學、市場調查與分析、餐飲展店規劃課程等,

還有很多關於餐旅管理方面的選修課程。

我想先修的學科是, 餐飲衛生管理、餐飲法文、巧克力工藝、法國料理、麵包製作、

蔬果切雕、西點蛋糕制作、食物品質管制、菜單規劃與設計、日本料理、飲料管理、

中式點心製備、高級食物製備等, 但若能的話我會選取一切學科。因此, 是我努力想要

就讀貴校的原因。

如果能夠順利進入貴系就讀, 除了修必修科目之外, 必當就學業與興趣上的需要, 盡可

能地多方面選修各項的科目, 以廣充自我的知識領域, 得到最大的學習效果, 以增加我

對餐飲管理有更廣的知識, 日後必有其用。此外, 我想利用其餘的時間加強自己的廚

藝技巧和語言能力。

(3) 課外時間的安排與運用:

以不影響課業為原則, 課餘時間的安排我希望可以參加貴校的各個社團, 可以提升領

導能力和學習團隊精神等。在暑假時, 我會留在臺彎工作賺取我的生活費和學雜費,

以減輕家裡的負擔, 工作期間也可以學習到人際關係和體會到父親工作的辛勞, 也開

始為未來做準備, 畢業後有了工作經驗, 學習對各個餐飲餐旅環境的適應能力, 才不會

覺得太辛苦。

(二) 未來期許:

未來大學畢業後, 我會周遊世界再提高對餐飲的知識, 並且認識和瞭解世界不同國家

的美食然後我會回到臺彎這個寶島努力的開一家米其林餐廳和推動台灣的美食走向世

界也會想開個餐飲管理學校這樣我可以在我的知識傳遞給有前途的學生, 因為我想給

回這個國家所教我的。

我非常喜歡這裡的美食環境和生活環境。工作幾年後, 環境允許, 我會到歐美國家繼續

深造以增加我的技巧以及知識, 也可以增加自己的國際觀, 語言和新事物等的知識。
