Air-conditioned storage can create an optimal fruit and vegetable storage environment under suitable low temperature through changing the gas composition and relative humidity in the storage environment; its effect can be presented in following aspects: the low oxygen concentration(generally, the O2 concentration is 1% to 5%), and appropriate CO2 concentration created in air-conditioned cold storage can effectively restrain the respiration, reduce fruit and vegetable nutriment loss, restrain pathogenic bacteria breeding, and control the occurrence of certain physiological diseases; eliminate ethylene in environmental gas in the storage to restrain its acceleration of maturation effect on fruit and vegetable, and delay after-repening and aging process;increase the relative humidity of environmental gas to reduce the transpiration of fruit and vegetable to achieve the purpose of long-term preservation and fresh-keeping of fruit and vegetable.
